Today I’m talking about and drinking the newest rum releases from Rhum JM out in Martinique, their Atelier range. The range consists of Jardin Fruite, Epices Creoles and Fumee Volcanique. The idea behind the range was to take three characteristics of the terroir surrounding the distillery and highlight each one in a different release through very specific barrel manipulation, aging and blending.
Since these are cocktail focused rums, I asked Bay Area tiki bartender extraordinaire, Doc Parks, to come over and help me try the rums in four different cocktails to see what kind of drinks they work well in and which ones to avoid.

Daiquiri

- 3/4oz Lime
- 3/4oz simple syrup
Donga Punch
- 2oz rum
- 1oz Grapefruit
- 1/2 oz cinnamon syrup
- 3/4oz lime juice
Three Dots and a Dash
- 1oz Rhum JM
- 1oz El Dorado 5
- 1/2oz dry curaçao
- 1/2oz falernum
- 1/4oz Allspice Dram
- 1oz lime juice
- 1/2oz honey syrup
- 3 dashes Angostura bitters
