I added 1/2 chimney of lit charcoal to some leftover charcoal. I left the top and bottom vents wide open. I flipped the meat after 20 minutes. Once they reached 115 degrees, I sprayed each side with olive oil and seared them. I seared the fat too, that’s why it flared up. I pulled them off at 140 degrees and let the rest to reach 145 internal temp. Total cook time 40 minutes. I don’t like pork chops but these were delicious.
