Instant Pot Egg Bites
4 Large Eggs
Bacon, Sausage or Ham
3/4 cup shredded cheese (I used white sharp cheddar)
1/2 cup cottage cheese
1/4 cup heavy cream
1/2 teaspoon salt
Dash of hot sauce

Combine all ingredients except the meat in a blender, blend until smooth. Spray silicone mold with cooking spray. Layer meat in the bottom, then pour egg mixture on top. Remove any air bubbles. Place lid or foil on the mold. Add 1 cup of water to the pressure cooker, using the rack with handles, lower the mold into the cooker. Set to steam for 8 minutes. Let the pressure cooker natural release for 10 minutes, then release remaining pressure. Let egg bites cool for a few minutes and run a knife around the edges to prevent sticking. These were so delicious, can’t wait to make them again using different meat and cheese combinations.
I used the cooked sausage as a time saver, just use whatever meat you like. You can brown it first but it’s not necessary.
