This is the best from scratch apple spice cake ever.
3 cups all-purpose flour
1 tablespoon apple pie spice
1⁄2 teaspoon salt
1⁄2 teaspoon baking powder
1⁄2 teaspoon baking soda
1-1⁄2 cups unsalted butter, softened
1-3⁄4 cups sugar
3 large eggs
3 cups chopped apple, such as Granny Smith or Gala
2 teaspoons orange zest
1 tablespoon vanilla extract
1⁄2 cup chopped pecans
Glaze
2 tablespoons butter - softened
1/2 cup powdered sugar
2 tablespoons maple syrup
1/4 cup chopped pecans
Preheat oven to 325°. Spray a 15-cup Bundt pan with nonstick baking spray with flour. Set aside.
In a large bowl, whisk together flour, apple pie spice, salt, baking powder, and baking soda. In a large bowl, beat butter and sugar at medium speed with an electric mixer until fluffy, stopping occasionally to scrape sides of bowl. Add eggs, one at a time, beating until combined.
With mixer on low speed, gradually add flour mixture, beating until combined. Add apple, zest, and vanilla, beating until combined. Fold in pecans. (Batter will be thick). Spoon into prepared pan, spreading evenly.
Bake until a wooden pick inserted near center comes out clean, approximately 1 hour and 5 minutes. Let cool in pan 15 minutes. Remove from pan, and let cool completely on a wire rack.
GLAZE:
Whisk the butter and powdered sugar together until smooth.
Whisk in the maple syrup until well blended; set aside at room temperature until ready to use.
Drizzle over the cake when it has completely cooled.
Sprinkle chopped nuts over glaze before it sets up.
