• 1 calf's food
• salt and pepper
• 2 onions, halved
• 1 onion, thinly sliced
• 1 lb. pork belly
• 4 pig's ears

• ½ lb. / 225 g. serrano ham scraps
• 1 bouquet garni (you better know what that is by NOW)
• 4 tbsp. / 56 g. pork fat
