Amritsari Style Aloo Wadi Ki Sabji is a delightful Punjabi dish known for its unique flavor. This spicy, gravy-based dish features sun-dried lentil dumplings, potatoes, and green peas.
Plain Urad Dal Wadi can be used if Amritsari Wadi is unavailable.
Ingredients:
2 cups boiled potatoes, cubed
1 cup green peas (frozen)
3/4 cup urad dal Wadi, broken
3/4 cup tomato puree
3 tbsp oil
1 tsp cumin seeds
1/8 tsp asafetida
1-1/2 tbsp crushed coriander
2 tsp crushed black pepper
2 dry red chilies, broken
1/4 tsp Kashmiri red chili powder (optional)
1/4 tsp turmeric
1-1/2 tsp salt
1-1/2 cups water
Method:
-Heat 2 tbsp oil in a pan over medium-low heat. Stir-fry urad dal vadi until golden brown, then set aside.
-In the same pan, add the remaining oil. Add cumin seeds, then asafetida. -Stir in tomato puree, coriander, black pepper, red chilies, chili powder, turmeric, and salt. Cook until the spice mix releases oil.
-Add potatoes, peas, vadis, and water. Cover and cook for 10 minutes.
-Serve with rice.
