8 slices of white bread
2 tablespoon oil
For Filling
3 tablespoons shredded coconut; I am using frozen shredded coconut, available in Indian grocery stores
1/4 teaspoon salt

2 teaspoons sliced almonds

1 cup romaine lettuce roughly chopped
½ cup spinach leaves roughly chopped
¼ cup cucumber cut into bite-size, I am using Asian cucumber

Aloo Bhindi is a popular dish in my home, a simple yet flavorful North Indian stir-fry made with potatoes (aloo) and okra (bhindi). This vegan and gluten-free dish is spiced just right, making it a crowd-pleaser for everyone at the table.
I always find that home-cooked meals are more flavorful, fresh, and nourishing, and this Aloo Bhindi is no exception. It’s quick to prepare, using everyday ingredients, and the balance of spices brings out the natural flavors of the vegetables. Masala Khichdi is a spicy variation of simple khichdi. This is healthy but ultimate comfort food.

Ingredients
1/2 cup moong dal washed and split
1/2 cup rice
1/2 cup green beans cut into about 1/2 inch pieces
1 potato medium size washed peeled and small cubed this will make about 1/2 cup of cubed potatoes
1 teaspoon salt
1/4 teaspoon turmeric (haldi)
1 tablespoon clarified butter (ghe)
3 cups water for cooking
For spice mix
2 tablespoons clarified butter (ghe)
1/2 teaspoon cumin seeds (jeera)
1/2 teaspoon mustard seeds (rai)
1/8 teaspoon asafetida (hing)
1-1/2 cups tomatoes finely chopped
1 green chili finely chopped adjust to taste
1/4 teaspoon red chili powder (lal mirch)
1/2 teaspoon salt
2 teaspoon ginger finely shredded
2 tablespoon cilantro finely chopped
¼ teaspoon garam masala

Ingredients:
4 cups whole milk
1 1/2 cups makhana (puffed lotus seeds)
1/2 cup rice (cooked and mashed)
1/2 cup sugar
2 Tbsp almonds (blanched and sliced, approx. 2 Tbsp)
2 Tbsp pistachios (blanched and sliced, approx. 2 Tbsp)
1/4 Tsp cardamom (crushed)
saffron (Few strands)
2 teaspoons ghee (clarified butter)

Instructions:
-Microwave the makhana for 30 seconds until crisp, then slice them into 2-3 pieces.
-In a heavy-bottomed pan over medium-low heat, melt ghee. Add makhana and sliced almonds, roast for 2 minutes.
-Add milk and rice, increase heat to medium-high, bring to a boil. Then reduce heat to medium and let it boil for 18-20 minutes, stirring occasionally.
-Add cardamom, saffron, and half of the pistachios.
-To caramelize sugar in another heavy-bottomed saucepan over medium heat, grease generously, then add sugar. Stir continuously until sugar melts and turns light brown. Turn off the heat when it becomes golden brown (4-6 minutes).
-Add the caramelized sugar to the hot kheer and return it to low-medium heat, stirring to ensure it mixes completely. Boil for another 2-3 minutes until the kheer reaches a soft pudding consistency.
-Garnish with remaining pistachios and serve warm.

Creamy spinach paired with paneer makes for a delicious main course. This recipe has always been one of my favorites, and I can prepare it quickly.

Although I’ve made this recipe before, I now want to simplify it by using just a few ingredients.

Even after so many years of cooking, I’m still learning and striving to keep things simple, healthy, nutritious, and flavorful.

This dish is made with blanched spinach, which helps retain its vibrant green color. I didn’t know why blanching was used in cooking, but this is all part of the learning process. Palak Paneer pairs perfectly with roti, naan, or paratha.

For Dough
1 cup whole wheat flour
2 Tbsp oil
¼ tsp salt
For filling
¼ cup coconut powder
¼ cup milk
½ cup milk powder
¼ tsp salt
¼ tsp red chili powder
2 tsp sugar
Also Need
¼ cup whole wheat flour for rolling.
4 Tbsp oil for cooking paratha

Coconut Paratha is a delicacy, I make parathas with so many different fillings, but I will say this is very different from others. Coconut Paratha can be served with the main meal, but one can also enjoy this as a snack with a hot cup of chai.

One day, my younger sister Kumkum, who is an excellent cook, called me from India and told me that I must try this coconut paratha, that I will love it. So, in fact, this is her recipe. She is also a big help who I can call when I get lost with the new recipes I am trying. She always has good suggestions.

This paratha has a complex flavor. Usually, stuffed parathas are not very thin, but coconut paratha is very thin and mildly spiced. They taste best when they are served hot. The paratha is crispy from outside and its inside filling has a different texture that is well balanced. Coconut parathas also taste as delicious when they are served at room temperature with pickle.

This recipe will make 8 parathas.
