Have you ever tried steaming a flour tortilla until it becomes soft and tender like a dumpling?
I hadn't seen anyone make tortillas this way, so I decided to experiment—and the results were surprisingly delicious.
In this video, I fill two flour tortillas with finely shredded red cabbage, chopped sausage, cheddar cheese, and a few simple seasonings, then steam them in the basket of my rice cooker while chicken and rice cook underneath. You can get by with just using cheese and cabbage if that is all you have,
The tortillas become incredibly soft and moist, almost like a dumpling, while soaking up the wonderful flavors of the filling.
This is one of the easiest, least expensive recipes I've made. It takes only a few minutes to prepare, makes a satisfying meal, and can be enjoyed either hot or cold. I even found that the leftovers tasted just as good straight from the refrigerator the next day.
