Step back to 1829 Scotland with The Old Cookbook Show! Today we’re baking a Scotch Diet Cake from The Cook and Housewife’s Manual by Mistress Margaret Dods — a fat-free, pre–baking powder cake made with eggs, sugar, and flour. Scotch Diet-Cake.-Take a pound of fine sugar sifted, the same weight of eggs very well whisked, and mix and beat these together for twenty minutes.
Season with lemon-grate and cinnamon.
Stir in very smoothly three-quarters of a pound of sifted flour. This is a very light cake, and will bake quickly. It may either be iced, or have sifted sugar strewed over it before baking.
