Welcome friends! In today’s episode of The Old Cookbook Show, we’re baking Fudge Squares from the United Farm Women of Alberta Cookbook, 5th edition (1946). This community cookbook, first published in 1928, is filled with handwritten notes, stains, and marks of approval from the women who cooked from it — true Canadian food history.

This recipe for fudge squares is simple yet unique, with one surprising ingredient you don’t often see in chocolate brownies: milk. The result? A dessert that’s not quite a brownie, not quite a cake—something deliciously in between. We’ll also dive into the history of “a square of chocolate” and how baking terminology has changed over the years.

FUDGE SQUARES Recipe

3 tablespoons shortening
1 egg
½ teaspoon vanilla
1 cup flour
1/8 teaspoon salt
1 cup sugar
2 ozs. melted unsweetened chocolate
1/3 cup milk
1 teaspoon baking powder
½ cup nuts cropped (not too fine).

Melt shortening.
Add sugar and unbeaten egg.
Mix well and add chocolate, vanilla and milk.
Add flour, which has been sifted with baking powder and salt.
Add nuts and mix well.
Spread thinly on greased shallow cake pan in oven 20 to 30 minutes.
Cut into 2-inch squares before removing from pan.
