1/2 cup oil 2 large eggs 1/2 cup sugar 1tsp vanilla 2 tbsp fresh lemon juice 1/2 cup milk 3/4 cup fresh or frozen blueberries 1 1/2 cups flour 1 tsp baking powder 1/8 tsp salt
Preheated oven 190C degrees C
Mix oil with sugar, then add the lemon juice, zest, vanilla, eggs, and milk.
In another bowl sift the flour with the baking powder and the salt.
Fold the dry ingredients into the wet slowly without over mixing.
Coat the blueberries in 1 tbsp flour then food them into the batter.
Bake for 40-45 minutes in a preheated oven, until a skewer comes out clean.
For the icing I just mixed icing sugar with a few drops of milk and lemon juice until I got the desired consistency. drizzled it over the cake once it was cooled.

Apple filled biscuits (I found this on instagram) Dough: *200g butter (room temp) *2 tbsp cornflour *1/2 cup icing sugar (powdered sugar) *2 tbsp yogurt *1 tbsp vinegar apple or white (forgot to record in video) *1/4 cup sunflower or vegetable oil *1 egg *1 tbsp baking powder *1 tsp vanilla *3.5 - 4 cups flour depending on dough
Apple filling: *5 apples peeled and grated *3 tbsp sugar (I used brown) *1 tsp cinnamon *(optional) 1/2 cup chopped walnuts
Bake in a preheated oven at 160C for 20 mins Let them cool then sprinkle powdered sugar on top
Spinach fatayer: Dough: 1 cup warm milk 1/2 cup warm water 2 heaped tbsp yogurt 1/4 cup oil 1 tbsp sugar 1 tsp salt 1 tsp baking powder 1 packet active dry yeast 3.5 - 4 cups flour (or as needed to form a soft dough)
Spinach filling: Fresh chopped spinach 2 Sautéed chopped onions 3 tbsp sumac 1/4 cup olive oil 1/4 cup pomegranate sauce or to taste (or Juice of 1 lemon Alternative) Salt , pepper to taste I like adding a pinch of chilli flakes
Dissolve the sugar in the warm milk with the water and add the yeast, let it sit for 10 minutes until foamy.
Mix in the yogurt and oil, add in the flour 1 cup at a time with the salt and baking powder, keep adding 1/2 cup flour after the first 3 cups, knead until you get a very soft dough. Place dough in an oiled bowl, let it rest until doubled in size (around 40 - 60mins)
I use this dough for all my fatayer recipes, so fill it with anything you like

For the bread rolls, I used my milk bread dough recipe, I just added fresh chopped rosemary in the dough. Then stuffed the balls with cheddar and mozzarella cheese, any cheese you like works well. Then brushed them with egg wash.
For the garlic topping, I melted some butter with crushed garlic, some chili flakes and parsley. I let the garlic sauté in the butter just for a few seconds. Brush the garlic butter mixture while the bread rolls are still hot from the oven!
For the butternut squash soup: 1 large butternut squash 1 whole head head 1 onion 2 tomatoes 3-4 cups vegetable broth or chicken stock 1/2 cup double cream or as desired Salt, pepper to taste a little onion and garlic powder Pinch of chili flakes if you want a slight punch 1 tbsp sugar Olive oil for drizzling
Drizzle olive oil over all the vegetables and roast for about 40 mins until tender. Then blend all the ingredients together including the peeled garlic. add the double cream and bring to a boil. Then serve :)

I found the apple muffin recipe online, it was so good and moist, I wanted to share it with you, here is the link for the full recipe and directions. Make sure to go check it out if you are willing to make them :)
Ingredients * 2 level cups apple pieces (peeled) , 0.7 cm / 1/3" cubes (2 large apples, I use red) * 1 tbsp melted butter , for muffin tim (or use paper liners) Wet: * 115g / 0.5 cup unsalted butter , melted (1 stick) * 1 cup (200g) brown sugar , packed * 2/3 cup (165 ml) milk (low fat, full fat, non dairy also fine) * 1 large egg (approx 60g / 2 oz) * 1 tsp white vinegar (or any other clear vinegar) Dry: * 2 cups (300g) wholemeal flour (wholewheat flour)(white also ok, Note 1) * 1 tsp baking soda (bi carb) (NOT baking powder) * 1 tsp cinnamon powder * Pinch salt Topping (optional): * 2 tbsp raw sugar (demerara sugar - large granules)
Instructions * Preheat oven to 200C/390F. * Brush a 12 hole, standard muffin tin with melted butter, or line with paper cases. (Note 3) * Place butter and brown sugar in a bowl, whisk to combine. * Add milk, then egg and vinegar. Whisk to combine. * Scatter flour across batter surface, followed by baking soda, cinnamon and salt. Whisk 10 times until the flour is incorporated - some lumps is fine. * Stir through apple -minimum stirs just to disperse. * Scoop batter into muffin tin - I use an ice cream scoop - filling it all the way to the top. If using a scooper, leave it the slight ball shape (see video) - don't smooth the top. You should get 12 (see Note 3). * Sprinkle with sugar (if using - makes surface slightly crispy), place muffins in the oven. * Immediately turn down to 180C/350F. * Bake for 20 minutes (standard) or 18 minutes (fan / convection) , or until a skewer comes out clean. * Rest in the muffin tin for 5 minutes then transfer to a rack to cool. * Once fully cooled, store in an airtight container - it will stay moist for up to 5 days. These also freeze very well.

Bake in a preheated oven at 180C / 350F for 30 mins or until golden brown. Decorate as desired, you can decorate with raw almonds before baking, or sprinkle with descinated coconut or pistachios. Here I sprinkled some pistachios and added some rose tea buds. Can be served warm or cold. Store in the refrigerator.

Bread recipe: 160 ml warm water 160 ml warm milk 80ml oil 1 tsp active dry yeast or half a package 1 tbsp sugar about 400g flour (more or less as needed)
Mix the warm water, milk and sugar. Sprinkle in the yeast and let it sit for 5-10 mins until foamy. Then add in the rest of the ingredients and knead until you get a smooth dough. Cover and let rise for about 1 hour or until doubled in size, shape the bread however you like, then cover again and let them double, about 15-30 mins. Tips: - Try to not add too much flour, you want a very soft dough. - You can rise the dough in the fridge if you want to make it a day before. I prefer putting it in the fridge for the second rise not the first because its ready to put straight into the oven. This is perfect for when you have guests to prepare it the previous day, or even to enjoy them with a cup of coffee for breakfast. - Use bread flour / strong flour , for a better non crumbly texture. - You can make a simple icing for the topping using just icing sugar mixed with drops of milk and a touch of vanilla. - I used half white half brown sugar for the filling, but you can use only brown for a richer and more dense texture.
