Fold the dry ingredients into the wet slowly without over mixing.Coat the blueberries in 1 tbsp flour then food them into the batter. Bake for 40-45 minutes in a preheated oven, until a skewer comes out clean. Mix in the yogurt and oil, add in the flour 1 cup at a time with the salt and baking powder, keep adding 1/2 cup flour after the first 3 cups, knead until you get a very soft dough. I hope you enjoy the video :)For the bread rolls, I used my milk bread dough recipe, I just added fresh chopped rosemary in the dough. Then stuffed the balls with cheddar and mozzarella cheese, any cheese you like works well. Then brushed them with egg wash.Milk bread video:youtube.com/watch?v=ObGmGkOCX0EFor the garlic topping, I melted some butter with crushed garlic, some chili flakes and parsley. I let the garlic sauté in the butter just for a few seconds. Brush the garlic butter mixture while the bread rolls are still hot from the oven!For the butternut squash soup:1 large butternut squash 1 whole head head 1 onion2 tomatoes3-4 cups vegetable broth or chicken stock 1/2 cup double cream or as desired Salt, pepper to tastea little onion and garlic powder Pinch of chili flakes if you want a slight punch 1 tbsp sugar Olive oil for drizzling Drizzle olive oil over all the vegetables and roast for about 40 mins until tender. Then blend all the ingredients together including the peeled garlic. add the double cream and bring to a boil. Make sure to go check it out if you are willing to make them :) recipetineats.com/brown-sugar-apple-muffinsIngredients* 2 level cups apple pieces (peeled) , 0.7 cm / 1/3" cubes (2 large apples, I use red)* 1 tbsp melted butter , for muffin tim (or use paper liners)Wet:* 115g / 0.5 cup unsalted butter , melted (1 stick)* 1 cup (200g) brown sugar , packed* 2/3 cup (165 ml) milk (low fat, full fat, non dairy also fine)* 1 large egg (approx 60g / 2 oz)* 1 tsp white vinegar (or any other clear vinegar)Dry:* 2 cups (300g) wholemeal flour (wholewheat flour)(white also ok, Note 1)* 1 tsp baking soda (bi carb) (NOT baking powder)* 1 tsp cinnamon powder* Pinch saltTopping (optional):* 2 tbsp raw sugar (demerara sugar - large granules)Instructions* Preheat oven to 200C/390F.* Brush a 12 hole, standard muffin tin with melted butter, or line with paper cases. (Note 3)* Place butter and brown sugar in a bowl, whisk to combine.* Add milk, then egg and vinegar. Whisk to combine.* Scatter flour across batter surface, followed by baking soda, cinnamon and salt. Whisk 10 times until the flour is incorporated - some lumps is fine.* Stir through apple -minimum stirs just to disperse.* Scoop batter into muffin tin - I use an ice cream scoop - filling it all the way to the top. If using a scooper, leave it the slight ball shape (see video) - don't smooth the top. You should get 12 (see Note 3).* Sprinkle with sugar (if using - makes surface slightly crispy), place muffins in the oven.* Immediately turn down to 180C/350F.* Bake for 20 minutes (standard) or 18 minutes (fan / convection) , or until a skewer comes out clean.* Rest in the muffin tin for 5 minutes then transfer to a rack to cool.* Once fully cooled, store in an airtight container - it will stay moist for up to 5 days. I prefer putting it in the fridge for the second rise not the first because its ready to put straight into the oven. This is perfect for when you have guests to prepare it the previous day, or even to enjoy them with a cup of coffee for breakfast. - Use bread flour / strong flour , for a better non crumbly texture. - You can make a simple icing for the topping using just icing sugar mixed with drops of milk and a touch of vanilla. - I used half white half brown sugar for the filling, but you can use only brown for a richer and more dense texture.#Cooking
