There should be no pink inside, and the internal temperature should reach 165 degrees Fahrenheit on an instant-read thermometer. 4. When chicken is done cooking, transfer the pieces to a clean cutting board. Allow them to sit for a few minutes prior to chopping so that the juices will redistribute.5. Finely chop the chicken, put into bowl, and place by stove.6. To cook the onion: You will use the same pan that you cooked the chicken in. Start by removing any excess oil or chicken bits from the pan.7. Saute the onion in a tiny bit of oil until translucent.8. When onion is done, add in the sauce and the chicken. STEP ONE NEEDS TO BE DONE AT LEAST A COUPLE HOURS IN ADVANCE OF ALL OTHER STEPS (or night before): Line an 8x8 pan with tinfoil and spray it lightly with non-stick spray. Allow a little tinfoil to hang over the edge. This will help you lift out the ice cream when it’s solid. Fill with ice cream and allow to melt just enough to smooth it out. Press the ice cream in, and fill it as high as you would like your sandwiches to be! Place in freezer until totally solid. (In my freezer it takes a couple of hours at least…it just depends on how well your freezer does its job). 2. Set out butter to soften3. Line a cookie sheet (at least 16 inches long) with parchment paper. Allow a little bit extra to hang over edge. This will help you lift it off the pan after baking.4. If you will be adding sprinkles or other treats, pour them into a wide bowl for easy dipping.5. When ice cream is solid, preheat oven to 375 degreesLET’S GET STARTED1. Start by mixing together your dry ingredients: In a medium-sized mixing bowl whisk together the brown rice flour, white rice flour, cocoa powder, salt, baking powder, and xanthan gum. Set aside.2. In a large-sized mixing bowl, mix together the butter and sugar until creamy. Add in yolks and vanilla. Mix together until well blended.3. Add dry mixture into the butter/egg mixture. Mix until well blended.4. Add water and mix until dough is smooth.5. Place dough onto baking sheet and spread with off-set spatula to form an 8x16 rectangle (actually make it a tiny bit larger on each side to allow for edges to be trimmed neat).6. Bake at 375° for 10 minutes.7. Remove from oven.8. Do not leave on pan. Carefully lift parchment off and place onto a cutting board (bend cake as little as possible to avoid cracking).9. Allow to cool for 15 minutes or so. 10. Place cake (still on the cutting board) into the freezer for another 20 minutes11. When cake is FULLY COLD THROUGHOUT you can assemble ice cream sandwiches! Remove cake from freezer. First, trim away any rough edges. Slice into sixteen 2”x4” pieces.12. If you want a very authentic ice cream sandwich look, use something to press 13 small indentations into each piece of cake. 13. Remove ice cream from freezer and lift ice cream out of pan with the tinfoil edge. You may need a spatula to help you remove it. Work very quickly once you have the ice cream out of the freezer.14. Slice into eight 2”x4” pieces.15. Place a plate, baking dish, or cookie sheet into the freezer for the completed sandwiches.16. To assemble, place an ice cream piece onto a cake piece and top with a second cake piece. Gently press down on top of sandwich to spread ice cream to outer edge of cake. If needed, smooth ice cream around edges with a butter knife. Press edges into sprinkles (or other topping) if desired. Place each sandwich immediately into freezer as you complete it.17. When all sandwiches are made and frozen firm, take out one at a time to wrap in waxed paper. Tape to secure.18. Set out a large plate with a couple of paper towels on it (for the cooked chicken)3. Set out a large frying pan and pour in about a ½ inch of oil4. Set out 2 large bowls (for flour mix #2, and the egg dip)LET’S GET STARTED1. Fill the ziplock bag with the first coating ingredients: white rice flour, tapioca flour, garlic powder, onion powder, paprika, and salt. Zip shut and shake thoroughly to combine all seasonings.2. In one of your bowls, prepare flour coating #2: Whisk together the white rice flour, tapioca flour, garlic powder, onion powder, salt, and black pepper.3. Prepare the egg dip in the second bowl by whisking together the eggs and the milk.4. Get the chicken out of the freezer. Trim away any fat. Cut into nugget-sized pieces. Try to make them similar in size so that they’ll cook evenly.5. Put all of the chicken pieces into the ziplock bag. Zip shut. Shake thoroughly to coat. (This step can be done in a bowl if you don’t have a ziplock bag…it’s just easier in a ziplock) 6. Dip a few chicken pieces into the egg mixture, and then into the flour mixture bowl. Press flour in gently to help it stick. Use one hand to dip into the egg, and the other to dip into the flour, so that you don’t transfer excess egg into the flour. Dip and coat all the pieces, a few at a time, then place on a large plate.7. Heat up your oil until a test piece causes the oil to sizzle. I heat my stove on medium or just below medium, but every stove is different, so adjust yours as needed. 8. Cooking time will vary depending on how thick your chicken is, but mine usually take about 5-6 minutes per side. When you think they are done, test the thickest nugget by slicing it in half. Chicken should be fully cooked and tender, with no pink remaining.9. When finished cooking, gently remove from oil to paper towel-lined plate. They will be VERY hot on the inside. Allow to drain and cool a little before serving.10. Transfer to serving dish and serve with your favorite dipping sauces! Enjoy!!!**To Cook/Freeze/Reheat: Fully cook the chicken nuggets and allow to cool. Flash freeze by setting on a plate or tray and putting into freezer for 15 minutes or so. Then, store in freezer ziplock bag or other airtight storage container. To reheat: Do not thaw nuggets. Preheat oven to 350 degrees. Place nuggets on cookie sheet sprayed with non-stick spray. Bake for about 15 minutes or until fully heated through. **To Oven Bake Instead of Pan Fry: With your second flour coating, make the following change: Replace the tapioca flour and white rice flour with fine gluten free bread crumbs (keep all seasonings the same). Bake on a cookie sheet or baking pan sprayed with non-stick spray. You can even lay down tinfoil and spray that for easy clean-up. Place chicken nuggets on pan or foil, single-layer, and bake at 400 degrees for about 20 minutes (adjust time according to size/thickness of chicken).Turn all pieces half-way through baking. Pour wet mix into the dry mix and whisk by hand until well blended.5. Gently fold egg whites into batter with rubber spatula6. Cook your waffles! Cook for about 5 minutes or until lightly golden and slightly crispy on the outside. In my 4-square waffle maker, I can make five ½-cup waffles. 7. Serve hot with your favorite toppings!Tip: Bake these the night before for a hassle-free breakfast the next morning. Just cook, cool them completely, and store in large zip-lock bag (press out as much air as possible). The next day, bring to room temperature on the counter while you are preheating your oven to 300 degrees. Pour 1/3 of batter over the cinnamon topping and use a spoon or spatula to smooth and level. Sprinkle remaining ½ of cinnamon filling to cover entire surface.9. Pour remaining 1/3 of batter over cinnamon topping. Use a spatula or spoon to smooth and level. 10. Using a butter knife, swirl the cinnamon throughout the batter. Smooth over the top so that no dry cinnamon is exposed. Now wipe off the knife and draw a line lengthwise in the top of the bread...this will encourage it to crack in the right place :)11. Bake, uncovered, at 350 degrees for 55 minutes, then insert thermometer if you have one.12. The top of the bread will probably crack open…this is normal for pound cake and shows that you did a great job! This exposed area may appear slightly moist even when the bread is fully baked. 13. Continue to bake for 5-10 minutes more, or until a long pick comes out with only a few moist crumbs (it should not be wet). The internal temperature of the bread should be 195-200 degrees. Total baking time is 60-65 minutes. 14. While bread is baking, prepare icing/glaze: in small bowl: Stir together 2 Tbsp. softened butter, confectioner’s sugar, vanilla, and milk. Stir until completely smooth. Set aside.15. When the bread is done, remove from oven and place on rack to cool, still in pan.16. Let cool in pan for 20 minutes before removing. Prior to this time your bread will be too delicate and may crack if removed when hot.17. After 20 minutes, run a knife carefully around edges to loosen, then carefully invert pan and remove cake. Allow to cool on wire rack before slicing. If sliced when too warm, cake may crumble a little as it will still be delicate.18. Ice cake while still slightly warm so that some icing will drip down sides. I like to also ice a second time when the cake is a little cooler. (double the yumm!)19. (We want to make sure that the yeast is alive).4. While the yeast is proofing, combine wet ingredients into a medium mixing bowl: eggs, apple cider vinegar, and butter. Mix together.5. Pour the wet ingredients into the dry ingredients. Mix together to form a crumbly mixture.6. Now take a look at your yeast…if it’s foamy, your yeast is alive and you may continue to step 7. If it is not foaming, you may have a bad package of yeast. Open a new package of yeast and re-proof. Continuing with inactive yeast will be a waste of time and ingredients. 7. Now add your active yeast mixture into the batter and mix for 7 minutes. (yes…7!). Gluten free flours behave differently than gluten flours, and the extra mixing time adds more air to the dough (to help the rolls rise), and adds to the structure of the roll.8. With a 2-inch scooper, make 9 mounds of batter in your baking dish. Each mound should only be about ¾ of a scoop.9. Cover with plastic wrap and let rise until doubled. This usually takes about 50-60 minutes at my house, but time will vary depending depend on the warmth in your kitchen. 10. While the rolls are rising, preheat your oven to 375°.11. When rolls have doubled in size, bake, uncovered, for the first 15 minutes.12. After 15 minutes, cover loosely with tinfoil to avoid over-browning. Do not seal tinfoil around edges of pan. 13. Bake 15 minutes more14. Bake a total of 30-32 minutes depending on how golden you want your rolls to be.15. Remove from oven 16. Brush with melted butter and serve warm. These rolls can be placed onto a serving dish and served as pull-apart rolls, or you can pre-cut the rolls and serve in a bread bowl or basket. Tip: Cover with plastic wrap to store overnight. These rolls re-warm nicely in the microwave. Finely chop the chocolate and divide ¾ into one small bowl, and ¼ into another (set this one aside).2. Set up your double-boiler with a few inches of water, and bring just to a steam.DIRECTIONS:1. Add the ¾ bowl of chocolate and the shortening to the double-boiler.2. Stir until chocolate is 75% melted only. Don’t melt the chocolate all the way. 3. Remove bowl from heat immediately when 75% has been melted, and wipe condensation from bottom of bowl. Be very careful to not let water get into your chocolate…it will ruin it!4. Bring chocolate bowl to your counter-top and add in the seed chocolate (the 25% that was set aside earlier).5. Stir vigorously until chocolate is perfectly smooth. This will take a few minutes as the chocolate pieces melt down. 6. Pour chocolate onto your work surface (marble slab, the back of a clean cookie sheet, or a clean granite counter-top).7. Using your off-set spatula, spread the chocolate by sweeping it back and forth to cover the surface. By doing this you are cooling down the chocolate and thinning it out.8. Excess chocolate can be swiped off and put back into your bowl.9. In a few minutes, you will see your chocolate start to become less shiny, and you will notice that it’s slightly harder to pull your spatula across. This means that it’s starting to set up. Once you see that the chocolate is mostly matte, that’s the time to stop touching it. Just let it rest for a few minutes. 10. When the chocolate appears to be set, gently press your finger onto a corner as a test. It should only leave a slight fingerprint, but the chocolate should be mostly solid. If it has not set, wait a few minutes more.11. Try a small test curl in a corner: With your curling tool at a 45 degree angle, gently push forward. If the chocolate mushes up, wait a few more minutes. If you get a curl, you’re ready to start!12. Using the full width of the curling tool, make your chocolate curls quickly. (As the chocolate sets more, it will become a little more difficult to make them.)13. Move each chocolate curl over to your waxed paper lined tray. 14. Store covered, in a single layer, at room temperature. Tip: Try to get chocolate with a high percentage of cacao. Poke a few holes in each potato with a fork2. Place potatoes on baking sheet and bake for about 50 minutes or until you can insert a fork easily. Baking time will vary because of different size potatoes. 3. While potatoes are baking, in a small bowl, mix together the seasonings: salt, pepper, paprika, parmesan, and garlic powder. Set aside.4. Cook bacon well, drain on paper towel, and chop. 5. When potatoes are done cooking, remove from oven and allow to cool for 10-15 minutes or until you can easily handle them.6. Slice each potato lengthwise, and with melon baller or spoon, scoop out about ½ of the flesh to create a nice place to put the toppings. Save the excess potato in a bowl for another use. If potatoes are still too hot to handle, use a clean kitchen towel to hold underneath.7. Brush both sides of potatoes lightly with olive oil and place skin-side down onto baking sheet. 8. Sprinkle with ½ the seasoning mixture, flip potatoes skin-side up, and sprinkle with other ½ of seasoning.9. Bake about 3 minutes, flip all potatoes, and bake another 3 minutes, or until potatoes are golden. 10. Remove from oven, and generously top with cheese, bacon, and green onion. (If you will be topping with sour cream later, then save out green onions to sprinkle on top of the sour cream.)11. Return to oven until cheese is melted (about 3 minutes).12. Top with sour cream and green onions (optional)13. Serve hot and watch them disappear! Give a quick stir and set aside to proof for 5 minutes. This will show that your yeast is alive. 4. While you are waiting for yeast to proof, in a medium mixing bowl, mix together your wet ingredients (eggs, apple cider vinegar, and butter). 5. Add this wet ingredients mix into your dry ingredients. Mix on low until everything is combined (it will be crumbly).6. After 5 minutes have passed, take a look at your yeast mix. It should be starting to foam to let you know it’s alive. If it is foamy, continue to step 7. If your yeast is not foaming, it may indicate that it is not alive. Check your package for expiration date, and if needed, try a different package. **If the yeast is not alive, do not continue with the recipe, as you will just be wasting your ingredients!** Get a fresh package and proof again.7. Once you have your yeast foaming, pour it into your batter. Beat on low until combined (about 30 seconds), then mix on medium/high for about 7 minutes more. (Please don’t skip the mixing time…it’s important to the results) Your batter should resemble a thick cake batter. (Don’t expect it to look like a gluten dough that you will knead because it won’t!)8. Pour into prepared loaf pan and smooth the top with the back of a spoon or a spatula.9. Cover with plastic wrap and set in a warm place to rise until dough reaches the top edge of the pan (roughly 35-40 minutes). Try to remove the plastic wrap just before dough touches it. Allow to continue rising as needed. 10. As the dough is rising, preheat your oven to 375° 11. When dough is done rising, bake on center rack until internal temperature reaches 207°. A thermometer is by far the best way to get success with bread, as every oven varies. However, if you don’t have one, as a guideline bake for 40 minutes. (Sometimes I cover mine loosely with tinfoil during the last 10-15 minutes of baking to prevent over-browning.) 12. Let cool COMPLETELY on wire rack before cutting. This will usually be at least 3 hours. It is normal for bread to sink slightly when cooling. To help keep top rounded you can cool bread on its side, rotating once in a while between sides and upright position. 13. When slicing bread, be sure to use a serrated knife to gently saw back and forth…don’t press or you will squish your beautiful loaf of bread.14. Enjoy!STORAGE:Whatever bread I don't use on day one, I slice and package in ziplock bags - 2 slices per bag. Then, I wrap each bag in tinfoil. I put these in the freezer. When I need a couple of slices I just take out one package. Turn into mush? Fail to set? I’ve been there! But after much practice and learning, I can spare you any further agony and give you tips to making perfect chocolate curls. Your friends and family will be amazed by your endless talents! **** PASTEL COLORED WHITE CHOCOLATE CURLS RECIPE **** ***Note: The microwave times will be different for each person depending on the microwave, so watch the chocolate as you go. When in doubt, do shorter increments of time*** INGREDIENTS:2 Tbsp. vegetable shortening2 cups white chocolate chipsGluten free food coloring (NOT water-based. Powdered or oil-based works well) GETTING READY: 1. Set out 2 clean baking sheets (11x16), off-set spatula, microwaveable bowl or cup, and a pastry scraper or flexible sharp-edged spatula for making curls. 2. Make space in your fridge for the baking sheets 3. Prepare a plate or baking pan with waxed paper for completed curls DIRECTIONS:1. Separate out about ¼ of the chips and set aside for later2. In a microwaveable cup or bowl, add shortening to the remaining chips.**The goal for the chocolate chips is to melt them only about 75%-80% of the way at 50% power. Then, quickly cool down the chocolate with the remaining chips to bring them back to a tempered state. ***Do not melt entirely in microwave at full power.** Yes, it’s easier and quicker, but you won’t get the end result that you want. Been there…done that. 3. Microwave the chips/shortening mixture for 45 seconds at 50% power. Stir. **Chips will probably not be ready yet but it’s important to go slowly. Patience is key here and every microwave heats differently.4. Microwave again for 30 seconds at 50% power. Stir. Observe how much of the chocolate is melted. Remember, you want to have remaining chunks of chips that have not melted yet. Resist the temptation to melt them all the way.5. At this point, depending on your microwave, you may be done, or you may need to put your chips in for another 30 seconds at 50% power, or you may need to start going at 10-15 second intervals at 50% power. Stir.6. If needed, continue these steps at 10-15 second intervals until chocolate is melty with chunks of chips remaining. 7. Once chocolate is about 75%-80% melted with chunks of chips remaining, add in remaining chips and stir. Allow new chips to melt as you stir. These chips act to cool the chocolate, bringing it back to a tempered state. You may need to let the chocolate sit for a minute to allow the new chips to soften. Stir until smooth, with no chunks remaining.8. Add in desired amount of food coloring and stir thoroughly 9. Place baking sheets in fridge for about one minute. Warning: if you leave your trays in the refrigerator much longer, this will cause your chocolate to set up too quickly, and your curls will crumble.10. Place your sheets upside down on the counter and pour 1/2 the melted chocolate onto each of them. Spread with off-set spatula back and forth, covering the entire surfaces. 11. As you spread, your chocolate will begin to set. You will notice this as the chocolate will start to lose its shine.12. Test chocolate by lightly pressing a finger to it. It should leave a light fingerprint, but not an indentation. 13. Test a corner of the chocolate with your scraping tool: Hold pan, angle tool at about 45 degrees, and push away from you. If chocolate mushes up without curling, wait a few more minutes for it to set more. Test again. Repeat until the chocolate curls. (If chocolate crumbles, the chocolate has set too much and must be re-softened.) 14. Gently move curls to waxed paper with your scraping tool and put in fridge. They will set nicely and be able to be handled to decorate your dessert.Tip: I make my chocolate curls a day in advance of making my dessert. I put them in an airtight/shallow/wide/rigid storage container to protect from moisture (and from being crushed by my kids going in and out of the fridge!) * Real World Example :)I just finished 2 trays of curls and it took just over 11 minutes for them to set enough to curl (it's a very warm day though). This time included me putting them into the fridge for 1 minute exactly to help them finish firming up enough. Don’t skip this part! This gives the gluten free flours time to absorb the liquids (this is a great time to clean up the kitchen anyway ). At some point while the dough is resting, preheat your oven to 375° so that it’s ready when the dough is.7. Create cookie dough balls with small scooper, and place on cookie sheet8. Bake at 375 degrees for 8-9 minutes or until edges are slightly browned. Centers will appear slightly undercooked, but will finish cooking on rack. 9. Leave cookies on pan for a minute or two. I like to use my spatula to gently go around the edges of the cookies to make them more circular. (not necessary, but it makes them prettier) Do this quickly before the cookies firm up.10. Move cookies to cooling rack with spatula. Careful…they will be soft until cooled.Tips: 1. Gluten free flours don’t behave like gluten flours, so letting the dough rest is important.2. Taking the cookies out when centers are still soft is important! 3. Add flour mixture into the milk mixture and whisk together. 6. Batter will be somewhat foamy…don’t worry this will help the pancakes to fluff up nicely* At this point, I like to do one little tester pancake. If it is not as puffy as I prefer, I add a little more white rice flour (about 2 Tbsp. at a time), and whisk it in. Then I repeat test until happy :)7. Pour batter onto griddle in desired amount.8. Flip pancakes when the bottom is golden. They are done when center is cooked and bottom is golden.9. Enjoy with gluten-free syrup!*** TIP When you are measuring out flours, DO NOT SCOOP FROM THE BAG...this would compact it and add more flour than called for. Put paper liners into your cupcake tray2. Preheat oven to 325 degreesDIRECTIONS:1. In medium mixing bowl, stir or whisk together the white rice flour, potato starch, tapioca flour, cocoa powder, baking powder, baking soda, and salt. 2. Add in the sugar and stir together.3. Now add in the egg, water, oil, and vanilla4. Beat on low speed until combined. Then beat on medium speed for 2 or 3 minutes.5. Batter will be thin…don’t worry! You can pour your batter into a tall measuring cup for easy pouring, but not necessary. 6. Fill cupcake liners 2/3 full and place into oven immediately (I use a ¼ cup measuring cup to scoop it into the liners and this works out perfectly to 12 cupcakes). 7. Bake for about 17-20 minutes or just until a toothpick inserted into the center of a cupcake comes out clean.8. Remove cupcakes carefully…they will be hot and soft. Let cool completely before frosting. Tip: These cupcakes work best with piped on frosting. If you are spreading on frosting then make sure the frosting is soft. Bake and cool cupcakes (use my recipe below, or any gluten free boxed mix)2. Set butter out to soften3. Clear a place in the refrigerator for a cookie sheet full of cupcakesDIRECTIONS:Prepare Filling:1. In medium mixing bowl, add butter, and powdered sugar. Mix until creamy.2. Add vanilla and marshmallow fluff. Mix until creamy. 3. Prepare pastry bag with Bismarck tip and fill4. Wrap end shut and place in refrigerator for 10-15 minutes to firm up slightlyFill Cupcakes:1. Line cookie sheet with paper towels for easy clean-up2. Set out all cupcakes on cookie sheet3. Hold filling bag vertically and gently press tip into cupcake. Start to slowly fill cupcake. You will feel cupcake getting full and may see top of cupcake rise. Be careful not to overfill and crack the cupcake top. If it cracks, you have my permission to eat the cupcake 4. Slowly remove pastry bag as you continue to fill, and pat down any loose crumbs5. Fill all cupcakes and set cookie sheet in refrigeratorChocolate Glaze:1. In microwave-safe bowl, combine chocolate chips, unsalted butter, and corn syrup.2. Melt chocolate in microwave oven, a little bit at a time, until chocolate is smooth and glossy. Be careful not to burn the chocolate. Stir frequently to check if it is melted. 3. When chocolate is melted, stir in vanilla Dipping the Cupcakes:1. Dip cupcake top into glaze and rotate to fully cover cupcake top. Set on cookie sheet.2. Dip all cupcakes and set tray into refrigerator to cool.Spiderweb Icing:1. In medium bowl, combine powdered sugar, butter, and milk2. Mix until smooth3. Prepare pastry bag with a #3 piping tip. Fill.Decorate!:1. When chocolate glaze has hardened to the point that you could give it a gently touch, you can start your spiderwebs.2. With your spiderweb icing, draw 3 circles on your cupcake, like a target3. Cut a piece of parchment paper to the size of your pan2. Proof your yeast by adding the yeast and the sugar to 1/3 cup hot tap water. Stir gently and set aside. This will test to see if your yeast is still active. Yeast should start to foam in a few minutes.3. To the other 1/3 cup hot tap water, add gelatin and stir to dissolve. Set aside.4. Preheat oven to 400 ̊ and place in your empty baking sheet or pizza pan to pre-heat.DIRECTIONS:1. In a large mixing bowl, stir together brown rice flour, white rice flour, potato starch, salt, garlic powder, baking powder, and xanthan gum.2. Now add olive oil, yeast mixture, and gelatin mixture. Mix at medium speed until dough is smooth. Dough will be sticky and will not resemble gluten dough. That’s o.k.!3. To roll out dough: Spray your pre-cut parchment paper with non-stick cooking spray and lay on work surface. Place dough in center, and lay another parchment on top (also sprayed with non-stick spray.) 4. Roll to desired thickness, remove top paper, and finish shaping dough by hand. Create a slightly thicker outer edge on your dough to keep in sauce and toppings. 5. Loosely cover with plastic wrap, and set in warm place for 30-40 minutes. Dough will rise slightly.6. After 30-40 minutes, remove heated pan from oven.7. Remove plastic from dough and transfer to pre-heated baking sheet by sliding parchment carefully over to heated pan.8. Bake for 6-7 minutes. You will bake it again after topping the pizza.9. Remove from oven, and move pizza crust and parchment off of hot pan to a cutting board to top.10. Increase oven temperature to 450 ̊. Return empty pan to oven to pre-heat again.11. Top your pizza with gluten free sauce, cheese, and favorite toppings.12. Remove pan from oven and carefully slide the topped pizza onto the heated pan without the parchment. (Trust me on this one…it will help to create a slightly crispy crust that is so important to great pizza!)13. Bake for about 8-9 minutes or until toppings are done and crust is lightly golden.14. Remove and enjoy!!! Set aside.2. In medium bowl combine ground beef, onion, egg, water, and bread crumb mix.3. Gently mix together with your hands, and form into meatballs using a scooper.4. Set meatballs on pan.5. Bake cocktail-sized meatballs for about 18-20 minutes, turning meatballs ½ way through cooking. In either case, bake until fully cooked. Check largest meatball for doneness.While meatballs are cooking, prepare teriyaki sauce as follows:6. In a medium-sized saucepan over medium heat, whisk together brown sugar, water, cornstarch, soy sauce, sesame oil, garlic powder, ginger, and vinegar. 7. Heat and whisk until bubbly, then reduce to simmer. Continue to heat for a few minutes, and check consistency.8. If you want to thicken the sauce a bit, in a small bowl add 1 tsp. cornstarch with a couple tablespoons water. Stir. Add this mixture to teriyaki sauce while whisking. Wait a few minutes and re-check consistency.9. Repeat this process until desired consistency is met. 10. Stir in cooked meatballs to coat and simmer a few minutes.11. Set out a clean baking sheet, off-set spatula, microwaveable bowl or cup, and a pastry scraper or flexible sharp-edged spatula for making curls. 2. Make space in your fridge for the baking sheet 3. Prepare a plate or baking pan with waxed paper for completed curls DIRECTIONS:1. Separate out about ¼ cup or a little less of the chips and set aside for later2. In a microwaveable cup or bowl, add shortening to the ¾ cup of chips.**The goal for the chocolate chips is to melt them about 75%-80% of the way at 50% power. Then, quickly cool down the chocolate with the remaining chips to bring them back to a tempered state. Do not melt entirely in microwave at full power. Yes, it’s easier and quicker, but you won’t get the end result that you want. Been there…done that. 3. Microwave the chips/shortening mix for 30 seconds at 50% power. Stir. **Chips will not be ready yet but it’s important to go slowly. Patience is key here. 4. Microwave again for 30 seconds at 50% power. Stir. Observe how much of the chocolate is melted. Remember, you want to have remaining chunks of chips that have not melted yet. Resist the temptation to melt them all the way.5. At this point, depending on your microwave, you may need to put your chips in for another 30 seconds at 50% power, or start going at 10-15 second increments at 50% power. Stir.6. Continue these steps at 10-15 second increments until chocolate is melty with chunks of chips remaining. 7. Once chocolate is about 75%-80% melted with chunks of chips remaining, add in remaining chips and stir. Allow new chips to melt as you stir. These chips act to cool the chocolate, bringing it back to a tempered state. You may need to let the chocolate sit for a minute to allow the new chips to soften. Stir until smooth, with no chunks remaining.8. Place baking sheet in fridge for about one minute. Much longer than this will cause your chocolate to set up too quickly.9. Place your sheet upside down and pour melted chocolate onto pan. Spread with off-set spatula back and forth, covering the entire surface.10. As you spread, your chocolate will begin to set. You will notice this as the chocolate will start to lose its shine and become more matte. 11. Test chocolate by lightly pressing a finger to it. It should leave a light fingerprint, but not an indentation. 12. Test a corner of the chocolate with your scraping tool: Hold pan, angle tool at about 45 degrees, and push away from you. If chocolate mushes up without curling, wait a few more minutes for it to set more. Test again. Repeat until the chocolate curls. (If chocolate crumbles, the chocolate has set too much and must be re-softened.) 13. Gently move curls to waxed paper with your scraping tool and set in fridge. They will set nicely and be able to be handled to decorate your dessert.Tip: I like to make my chocolate curls a day in advance of making my dessert. I put them in a shallow/wide storage container to protect from being crushed by my kids going in and out of the fridge Thanks for watching! Mince garlic2. Wash chicken and trim excess fat 3. Wash and chop cilantro4. Dice onionDIRECTIONS:1. Place chicken in saute pan and pour enough water in to cover chicken. Bring to a boil.2. Reduce heat, cover, and simmer 15-20 minutes, or until chicken is fully cooked.3. Transfer chicken to a baking dish and shred with 2 forks. Set aside.4. In saute pan, over medium heat, cook onion in a few tablespoons oil. When onion is translucent, add garlic. Cook just a couple minutes more, being careful not to burn garlic.5. Pour in tomato sauce, chili powder, cumin, sugar, salt, hot jalapenos and mild chiles. Start with only 1/2 the can of sauce until chicken is added. Then add more according to your preference. Some people like it more saucy. 6. Stir. Reduce heat. 7. Add in chicken and simmer 5-10 minutes. 8. Add cilantro and stir. 9. Serve with gluten free taco shells (hard or soft).
