RECIPE: BAKED ZITI
1 lb. gluten free penne, ziti, or similar pasta 1 lb. ground beef Mild Italian sausage (2-3) 4 cloves garlic 1 medium-sized yellow onion 2 jars gluten free spaghetti sauce of choice 6 oz. provolone cheese, sliced 6 oz. mozzarella cheese ¼ cup grated parmesan cheese 1 egg 1 ½ cups ricotta cheese ½ tsp. salt ¼ tsp. black pepper ½ tsp. Italian seasoning
Getting Ready: 1. Chop onion 2. Shred the mozzarella 3. Mince the garlic 4. Grate the parmesan 5. Spray a 9x13 baking dish with cooking spray
Directions: 1. In medium saucepan or large sautee pan cook beef, sausage, onion and garlic. 2. When meats are thoroughly cooked, add sauce and simmer 15 minutes. 3. Bring a pot of water to boil and cook pasta until al dente. 4. In a medium bowl, combine egg, ricotta, salt, pepper, and Italian seasoning. Stir. Set aside. 5. Preheat oven to 350 degrees 6. Gently stir pasta into meat/sauce mixture 7. To assemble, layer ingredients in this order: a. Spoon in ½ the sauce/pasta mixture b. Single layer of provolone c. ½ the ricotta mixture d. ½ the mozzarella e. ½ the parmesan f. Repeat a-e 8. Cover with tinfoil 9. Bake 30-40 minutes or until heated through.
Tip: If you would like top cheeses to brown a little, simply take the tinfoil off 5 minutes before completion of cooking.

Hi Everyone! This video is Part 1 of a 2-Part series. In this video I'll show you how to make beautiful and delicious sugar cookie cut-outs (roll-outs). I'll show you little tips along the way that will will have a big impact on your cookies, and help you make sugar cookies that your local bakery would be jealous of :) All my recipes are gluten free, and I use Bob's Red Mill gluten free flours. Please check your ingredients to make sure that they're gluten free as well. Baking gluten free can be a little tricky because gluten free doughs don't behave the same way that "gluten" doughs do. If you follow my recipe exactly, and watch the video as you're baking (or follow the photo step-by-step on my website), your results should come out just like mine. After your gluten free sugar cookies cool, please watch Part 2 of this series. In Part 2 (Royal Icing and Decorating), I show you how to make Royal Icing that will harden to a beautiful finish. *** RECIPE *** CHEWY BROWNIE COOKIES WITH WALNUTS (gluten free)
INGREDIENTS:
¼ cup white rice flour (1.3 oz.) ¼ cup brown rice flour (1.1 oz.) 1/3 cup tapioca flour (1.3 oz.) 1/3 cup cocoa powder ¼ tsp. salt ¼ tsp. baking soda ¾ tsp. xanthan gum ¼ cup butter ½ cup + 2 Tbsp. dark brown sugar, firmly packed ¼ cup granulated sugar ¾ tsp. vanilla 1 large egg + 1 yolk ½ cup chopped walnuts ¾ cup semi-sweet chocolate chips
OTHER: Parchment paper Small scooper
GETTING READY 1. Line your cookies sheet with parchment paper 2. Measure out and chop walnuts (fairly small)
LET’S GET STARTED 1. Combine your dry ingredients: Set out a medium-sized bowl and whisk together the white rice flour, brown rice flour, tapioca flour, cocoa powder, salt, baking soda, and xanthan gum. Set aside. 2. Into another medium-sized mixing bowl, add your brown sugar and granulated sugar. Break up any lumps of brown sugar. 3. In a small frying pan, melt the butter over low heat. 4. When butter is melted, pour on top of the sugars. Mix with beater. Dough will still be crumbly. 5. Into the sugars bowl, add your egg, egg yolk, and vanilla. Mix well until thoroughly combined. 6. Pour this wet mixture into the dry mixture. Mix with beater, starting on low speed until all dry is mixed in. Turn up to medium speed and continue to beat until well mixed. Dough will be thick. 7. Add in walnuts and chocolate chips. Stir in by hand. 8. Refrigerate for 30 minutes. 9. As cookie dough is in fridge, preheat oven to 350 degrees. 10. Scoop cookie dough onto parchment paper with small scooper. 11. Bake for 11 minutes. 12. Transfer to cooling rack immediately (be careful, cookies will be soft.) 13. Eat!
* Makes about 17 cookies * This recipe can be doubled
Tip: This cookie dough can be made the day before, covered, and refrigerated overnight. To bake the cookies, remove from refrigerator, leave at room temperature for 20 minutes, bake as listed above in preheated oven.

****RECIPE**** GLUTEN FREE ASIAN CHICKEN LETTUCE WRAPS
INGREDIENTS:
2 boneless/skinless chicken breasts(or equivalent amount of ground chicken) 4 Tbsp. oil (to cook the chicken) 1/3 cup white onion, minced
For the Sauce: ¼ cup gluten free Hoisin sauce (not all are gluten free so be careful!) 2 Tbsp. gluten free soy sauce ¼ tsp. salt 1 Tbsp. + 1 tsp. sesame oil ½ tsp. garlic powder ¼ tsp. red pepper flakes 1 Tbsp. brown sugar 1 Tbsp. peanut butter ½ can (4 oz.) water chestnuts
Add In At End of Cooking: ¼ cup cashews, finely chopped 1 cup green onion, finely chopped
To Serve: 1 head of iceberg lettuce
GETTING READY 1. To prepare lettuce, remove and discard one outer leaf. Pull out core. Make a clean cut off the end of the head. Run under cold water, filling between the leaves to loosen them. Drain out water. Gently separate leaves and set onto a serving platter. Place into fridge to chill. 2. Finely chop the onion. Put into small bowl and place by your stove. 3. Finely chop the cashews. Put into small bowl. 4. Wash and finely chop the green onion. Put into same bowl as cashews, set by stove. 5. Drain and finely chop the water chestnuts. Put into small bowl. Set aside. 6. Trim chicken, lay a piece of plastic wrap over it, and pound down any areas that are higher so that chicken will cook evenly. When finished, place chicken into fridge.
LET’S GET STARTED 1. Prepare the sauce as follows: Into the same bowl as your water chestnuts, stir in all other sauce ingredients listed above. Mix well. Set by your stove. 2. Cooking the chicken: In a large frying or saute pan, heat the oil over slightly higher than medium temperature. 3. Add in the chicken breasts and cook for about 3-4 minutes, or until golden underneath. Flip chicken over and cook for another 3-4 minutes or until golden. Cover pan, turn stove to low temperature, and continue cooking until chicken is tender and fully cooked (typically 5 minutes, but this depends on how thick your chicken is). There should be no pink inside, and the internal temperature should reach 165 degrees Fahrenheit on an instant-read thermometer. 4. When chicken is done cooking, transfer the pieces to a clean cutting board. Allow them to sit for a few minutes prior to chopping so that the juices will redistribute. 5. Finely chop the chicken, put into bowl, and place by stove. 6. To cook the onion: You will use the same pan that you cooked the chicken in. Start by removing any excess oil or chicken bits from the pan. 7. Saute the onion in a tiny bit of oil until translucent. 8. When onion is done, add in the sauce and the chicken. Stir and simmer on low for a few minutes until heated through. 9. Add in the green onion and cashews. Stir. 10. Serve hot! You can either fill a small serving bowl with the chicken filling and set it (with a spoon) next to the chilled lettuce cups on the serving tray for your guests to fill, or, if they will be eaten immediately, you can pre-fill the lettuce cups and neatly arrange them on the serving tray. Either serving suggestion will look beautiful!

Summer is ice cream time…actually any time is ice cream time! These homemade ice cream sandwiches are so much fun to make (get the kids involved!), and they’re great because you can customize them to your liking! Pick the ice cream flavor, and everyone can dip theirs into their favorite treat!
For The Cake: ½ cup brown rice flour ½ cup white rice flour 1 cup special dark cocoa powder ½ tsp. salt ½ tsp. baking powder ½ tsp. xanthan gum ½ cup (1 stick) + 2 Tbsp. butter, softened 2/3 cup granulated sugar 4 large egg yolks 2 tsp. vanilla ½ cup hot water
Filling: Ice Cream (any flavor), 1.5 qt.
For Dipping (optional): Sprinkles, nuts, mini chocolate chips, crushed GF cookies, Mini M&Ms, etc.
GETTING READY 1. STEP ONE NEEDS TO BE DONE AT LEAST A COUPLE HOURS IN ADVANCE OF ALL OTHER STEPS (or night before): Line an 8x8 pan with tinfoil and spray it lightly with non-stick spray. Allow a little tinfoil to hang over the edge. This will help you lift out the ice cream when it’s solid. Fill with ice cream and allow to melt just enough to smooth it out. Press the ice cream in, and fill it as high as you would like your sandwiches to be! Place in freezer until totally solid. (In my freezer it takes a couple of hours at least…it just depends on how well your freezer does its job). 2. Set out butter to soften 3. Line a cookie sheet (at least 16 inches long) with parchment paper. Allow a little bit extra to hang over edge. This will help you lift it off the pan after baking. 4. If you will be adding sprinkles or other treats, pour them into a wide bowl for easy dipping. 5. When ice cream is solid, preheat oven to 375 degrees
LET’S GET STARTED 1. Start by mixing together your dry ingredients: In a medium-sized mixing bowl whisk together the brown rice flour, white rice flour, cocoa powder, salt, baking powder, and xanthan gum. Set aside. 2. In a large-sized mixing bowl, mix together the butter and sugar until creamy. Add in yolks and vanilla. Mix together until well blended. 3. Add dry mixture into the butter/egg mixture. Mix until well blended. 4. Add water and mix until dough is smooth. 5. Place dough onto baking sheet and spread with off-set spatula to form an 8x16 rectangle (actually make it a tiny bit larger on each side to allow for edges to be trimmed neat). 6. Bake at 375° for 10 minutes. 7. Remove from oven. 8. Do not leave on pan. Carefully lift parchment off and place onto a cutting board (bend cake as little as possible to avoid cracking). 9. Allow to cool for 15 minutes or so. 10. Place cake (still on the cutting board) into the freezer for another 20 minutes 11. When cake is FULLY COLD THROUGHOUT you can assemble ice cream sandwiches! Remove cake from freezer. First, trim away any rough edges. Slice into sixteen 2”x4” pieces. 12. If you want a very authentic ice cream sandwich look, use something to press 13 small indentations into each piece of cake. 13. Remove ice cream from freezer and lift ice cream out of pan with the tinfoil edge. You may need a spatula to help you remove it. Work very quickly once you have the ice cream out of the freezer. 14. Slice into eight 2”x4” pieces. 15. Place a plate, baking dish, or cookie sheet into the freezer for the completed sandwiches. 16. To assemble, place an ice cream piece onto a cake piece and top with a second cake piece. Gently press down on top of sandwich to spread ice cream to outer edge of cake. If needed, smooth ice cream around edges with a butter knife. Press edges into sprinkles (or other topping) if desired. Place each sandwich immediately into freezer as you complete it. 17. When all sandwiches are made and frozen firm, take out one at a time to wrap in waxed paper. Tape to secure. 18. Refreeze again before eating if needed, or eat IMMEDIATELY :)

****RECIPE**** GLUTEN FREE SEASONED CHICKEN NUGGETS Makes about 35 chicken nuggets (more or less, based on size)
INGREDIENTS:
4 boneless, skinless, chicken breasts
Flour Coating #1 (In Ziplock Bag): ½ cup white rice flour ½ cup tapioca flour 1 tablespoon + 1 tsp. garlic powder 1 tablespoon onion powder 1 tablespoon + 1 tsp. sweet paprika ¾ teaspoon salt
Flour Coating #2 (in bowl): ¾ cup white rice flour ½ cup tapioca flour 1 tablespoon + 1 tsp. garlic powder 1 tablespoon onion powder ¾ teaspoon salt 2 teaspoons black pepper
Egg Dip: 3 large eggs 2 tablespoons milk
Oil for frying Large Zip-lock bag
Optional: Gluten free dipping sauce
GETTING READY 1. Put chicken into the freezer as you are getting everything ready…this will firm it up just a little and make it easier to cut up 2. Set out a large plate with a couple of paper towels on it (for the cooked chicken) 3. Set out a large frying pan and pour in about a ½ inch of oil 4. Set out 2 large bowls (for flour mix #2, and the egg dip)
LET’S GET STARTED 1. Fill the ziplock bag with the first coating ingredients: white rice flour, tapioca flour, garlic powder, onion powder, paprika, and salt. Zip shut and shake thoroughly to combine all seasonings. 2. In one of your bowls, prepare flour coating #2: Whisk together the white rice flour, tapioca flour, garlic powder, onion powder, salt, and black pepper. 3. Prepare the egg dip in the second bowl by whisking together the eggs and the milk. 4. Get the chicken out of the freezer. Trim away any fat. Cut into nugget-sized pieces. Try to make them similar in size so that they’ll cook evenly. 5. Put all of the chicken pieces into the ziplock bag. Zip shut. Shake thoroughly to coat. (This step can be done in a bowl if you don’t have a ziplock bag…it’s just easier in a ziplock) 6. Dip a few chicken pieces into the egg mixture, and then into the flour mixture bowl. Press flour in gently to help it stick. Use one hand to dip into the egg, and the other to dip into the flour, so that you don’t transfer excess egg into the flour. Dip and coat all the pieces, a few at a time, then place on a large plate. 7. Heat up your oil until a test piece causes the oil to sizzle. I heat my stove on medium or just below medium, but every stove is different, so adjust yours as needed. 8. Cooking time will vary depending on how thick your chicken is, but mine usually take about 5-6 minutes per side. When you think they are done, test the thickest nugget by slicing it in half. Chicken should be fully cooked and tender, with no pink remaining. 9. When finished cooking, gently remove from oil to paper towel-lined plate. They will be VERY hot on the inside. Allow to drain and cool a little before serving. 10. Transfer to serving dish and serve with your favorite dipping sauces! Enjoy!!!
**To Cook/Freeze/Reheat: Fully cook the chicken nuggets and allow to cool. Flash freeze by setting on a plate or tray and putting into freezer for 15 minutes or so. Then, store in freezer ziplock bag or other airtight storage container. To reheat: Do not thaw nuggets. Preheat oven to 350 degrees. Place nuggets on cookie sheet sprayed with non-stick spray. Bake for about 15 minutes or until fully heated through.
**To Oven Bake Instead of Pan Fry: With your second flour coating, make the following change: Replace the tapioca flour and white rice flour with fine gluten free bread crumbs (keep all seasonings the same). Bake on a cookie sheet or baking pan sprayed with non-stick spray. You can even lay down tinfoil and spray that for easy clean-up. Place chicken nuggets on pan or foil, single-layer, and bake at 400 degrees for about 20 minutes (adjust time according to size/thickness of chicken).Turn all pieces half-way through baking. Chicken should be fully cooked with no pink remaining inside. Test the thickest chicken nugget to make sure they are done.

****RECIPE**** GLUTEN FREE BUTTERMILK BELGIAN WAFFLES Makes: 5 waffles (1/2 cup each)
INGREDIENTS: *Please note: Weighing your flours is the most accurate method, but if you do not use a scale, remember not to scoop your measuring cup into the bag…instead, spoon flour into your measuring cup and level off with the back edge of a knife.
Dry Ingredients: 1 cup white rice flour (5.7 oz.) 1/3 cup tapioca flour (1.3 oz.) ¼ cup brown rice flour (1.0 oz.) ¼ cup cornstarch (1.2 oz.) ½ tsp. baking soda 1 ½ tsp. baking powder ½ tsp. salt 3 Tbsp. granulated sugar
Wet Ingredients: 4 Tbsp. butter 1 cup buttermilk 1 tsp. vanilla 2 large eggs, separated
GETTING READY 1. Melt butter and pour into a medium-sized mixing bowl. 2. Separate eggs (both whites and yolks will be used) 3. Bring eggs and buttermilk to room temperature before starting 4. Pre-heat waffle iron
LET’S GET STARTED 1. In a medium-sized mixing bowl, whisk together all dry ingredients: white rice flour, tapioca starch, brown rice flour, cornstarch, baking soda, baking powder, salt, and sugar 2. When butter is cooled, add to it the buttermilk, vanilla, and yolks. Stir or whisk by hand. 3. Beat the egg whites until stiff peaks form 4. Pour wet mix into the dry mix and whisk by hand until well blended. 5. Gently fold egg whites into batter with rubber spatula 6. Cook your waffles! Cook for about 5 minutes or until lightly golden and slightly crispy on the outside. In my 4-square waffle maker, I can make five ½-cup waffles. 7. Serve hot with your favorite toppings!
Tip: Bake these the night before for a hassle-free breakfast the next morning. Just cook, cool them completely, and store in large zip-lock bag (press out as much air as possible). The next day, bring to room temperature on the counter while you are preheating your oven to 300 degrees. Heat on a baking sheet loosely covered with foil for about 15 minutes.

Glaze: 2 Tbsp. butter, softened 3/4 cup confectioner’s sugar ½ tsp. vanilla 2 tsp. milk **adjust the glaze to your liking by thinning it with a tiny bit more milk, or thickening it with a little more confectioner's sugar**
GETTING READY 1. Generously grease and flour (gluten free) a 9x5 loaf pan 2. Set out butter to soften 3. Set out eggs to bring to room temperature 4. Preheat oven to 350 degrees
LET’S GET STARTED 1. Make the cinnamon mix: In small bowl, stir together 3 Tbsp. sugar and 1 Tbsp. plus 1tsp. cinnamon. Set aside. 2. In a medium-sized bowl, mix together your dry ingredients: brown rice flour, tapioca flour, corn starch, salt, baking powder, and xanthan gum. Whisk together well. Set aside. 3. In large mixing bowl, cream together the 2 sticks softened butter and 1 and 1/3 cups granulated sugar. Continue until fluffy and light in color. This usually takes 5 or 6 minutes. 4. To the creamed butter, add eggs, one at a time, mixing in between each addition just until the yolks blend in. 5. Add the flour mix into the butter/egg mix 1/3 at a time. Mix between each addition. 6. Now add in the oil, vanilla, and buttermilk. Mix until fluffy again. 7. Pour 1/3 of batter into pan and smooth with spoon or spatula to level. Sprinkle ½ of cinnamon filling to cover entire surface. 8. Pour 1/3 of batter over the cinnamon topping and use a spoon or spatula to smooth and level. Sprinkle remaining ½ of cinnamon filling to cover entire surface. 9. Pour remaining 1/3 of batter over cinnamon topping. Use a spatula or spoon to smooth and level. 10. Using a butter knife, swirl the cinnamon throughout the batter. Smooth over the top so that no dry cinnamon is exposed. Now wipe off the knife and draw a line lengthwise in the top of the bread...this will encourage it to crack in the right place :) 11. Bake, uncovered, at 350 degrees for 55 minutes, then insert thermometer if you have one. 12. The top of the bread will probably crack open…this is normal for pound cake and shows that you did a great job! This exposed area may appear slightly moist even when the bread is fully baked. 13. Continue to bake for 5-10 minutes more, or until a long pick comes out with only a few moist crumbs (it should not be wet). The internal temperature of the bread should be 195-200 degrees. Total baking time is 60-65 minutes. 14. While bread is baking, prepare icing/glaze: in small bowl: Stir together 2 Tbsp. softened butter, confectioner’s sugar, vanilla, and milk. Stir until completely smooth. Set aside. 15. When the bread is done, remove from oven and place on rack to cool, still in pan. 16. Let cool in pan for 20 minutes before removing. Prior to this time your bread will be too delicate and may crack if removed when hot. 17. After 20 minutes, run a knife carefully around edges to loosen, then carefully invert pan and remove cake. Allow to cool on wire rack before slicing. If sliced when too warm, cake may crumble a little as it will still be delicate. 18. Ice cake while still slightly warm so that some icing will drip down sides. I like to also ice a second time when the cake is a little cooler. (double the yumm!)
19. Tip: If you prefer a crunchy top to your cake, you can save aside some of the cinnamon filling to sprinkle on top before baking, but don’t smooth it over with batter.

****RECIPE**** SOFT AND FLUFFY GLUTEN FREE DINNER ROLLS INGREDIENTS:

Wet Ingredients: 2 large eggs (room temp.) 1 tsp. apple cider vinegar 3 Tbsp. butter
Yeast Mix: ¾ cup hot water 3 Tbsp. sugar 2 tsp. Active Dry Yeast
GETTING READY 1. Generously grease a 8X8 baking dish 2. Set out butter to soften 3. Set out eggs to bring to room temperature
LET’S GET STARTED 1. Start by mixing together your dry ingredients in a large mixing bowl: add your brown rice flour, corn starch, tapioca flour, xanthan gum, salt, and baking powder. Whisk together. 2. Now in a microwaveable container, heat your water to 100°-110°. In my microwave this takes about 25 seconds. 3. To the water, add your yeast and sugar. Stir and set aside for 5 minutes to proof. (We want to make sure that the yeast is alive). 4. While the yeast is proofing, combine wet ingredients into a medium mixing bowl: eggs, apple cider vinegar, and butter. Mix together. 5. Pour the wet ingredients into the dry ingredients. Mix together to form a crumbly mixture. 6. Now take a look at your yeast…if it’s foamy, your yeast is alive and you may continue to step 7. If it is not foaming, you may have a bad package of yeast. Open a new package of yeast and re-proof. Continuing with inactive yeast will be a waste of time and ingredients. 7. Now add your active yeast mixture into the batter and mix for 7 minutes. (yes…7!). Gluten free flours behave differently than gluten flours, and the extra mixing time adds more air to the dough (to help the rolls rise), and adds to the structure of the roll. 8. With a 2-inch scooper, make 9 mounds of batter in your baking dish. Each mound should only be about ¾ of a scoop. 9. Cover with plastic wrap and let rise until doubled. This usually takes about 50-60 minutes at my house, but time will vary depending depend on the warmth in your kitchen. 10. While the rolls are rising, preheat your oven to 375°. 11. When rolls have doubled in size, bake, uncovered, for the first 15 minutes. 12. After 15 minutes, cover loosely with tinfoil to avoid over-browning. Do not seal tinfoil around edges of pan. 13. Bake 15 minutes more 14. Bake a total of 30-32 minutes depending on how golden you want your rolls to be. 15. Remove from oven 16. Brush with melted butter and serve warm. These rolls can be placed onto a serving dish and served as pull-apart rolls, or you can pre-cut the rolls and serve in a bread bowl or basket.
Tip: Cover with plastic wrap to store overnight. These rolls re-warm nicely in the microwave.

6 oz. good quality semi-sweet or dark chocolate 1 tsp. vegetable shortening
TOOLS: Off-set spatula Curl-making tool Double-boiler Marble slab or clean cookie sheet Tray lined with wax paper to store finished curls
GETTING READY: 1. Finely chop the chocolate and divide ¾ into one small bowl, and ¼ into another (set this one aside). 2. Set up your double-boiler with a few inches of water, and bring just to a steam.
DIRECTIONS: 1. Add the ¾ bowl of chocolate and the shortening to the double-boiler. 2. Stir until chocolate is 75% melted only. Don’t melt the chocolate all the way. 3. Remove bowl from heat immediately when 75% has been melted, and wipe condensation from bottom of bowl. Be very careful to not let water get into your chocolate…it will ruin it! 4. Bring chocolate bowl to your counter-top and add in the seed chocolate (the 25% that was set aside earlier). 5. Stir vigorously until chocolate is perfectly smooth. This will take a few minutes as the chocolate pieces melt down. 6. Pour chocolate onto your work surface (marble slab, the back of a clean cookie sheet, or a clean granite counter-top). 7. Using your off-set spatula, spread the chocolate by sweeping it back and forth to cover the surface. By doing this you are cooling down the chocolate and thinning it out. 8. Excess chocolate can be swiped off and put back into your bowl. 9. In a few minutes, you will see your chocolate start to become less shiny, and you will notice that it’s slightly harder to pull your spatula across. This means that it’s starting to set up. Once you see that the chocolate is mostly matte, that’s the time to stop touching it. Just let it rest for a few minutes. 10. When the chocolate appears to be set, gently press your finger onto a corner as a test. It should only leave a slight fingerprint, but the chocolate should be mostly solid. If it has not set, wait a few minutes more. 11. Try a small test curl in a corner: With your curling tool at a 45 degree angle, gently push forward. If the chocolate mushes up, wait a few more minutes. If you get a curl, you’re ready to start! 12. Using the full width of the curling tool, make your chocolate curls quickly. (As the chocolate sets more, it will become a little more difficult to make them.) 13. Move each chocolate curl over to your waxed paper lined tray. 14. Store covered, in a single layer, at room temperature.
Tip: Try to get chocolate with a high percentage of cacao. In my recipe I used a bar with 56%.

GETTING READY: 1. Shred the cheeses if not already shredded 2. Finely chop green onion 3. Scrub the potatoes to clean 4. Line a baking sheet with parchment for easy clean-up. 5. Preheat oven to 400°
DIRECTIONS: 1. Poke a few holes in each potato with a fork 2. Place potatoes on baking sheet and bake for about 50 minutes or until you can insert a fork easily. Baking time will vary because of different size potatoes. 3. While potatoes are baking, in a small bowl, mix together the seasonings: salt, pepper, paprika, parmesan, and garlic powder. Set aside. 4. Cook bacon well, drain on paper towel, and chop. 5. When potatoes are done cooking, remove from oven and allow to cool for 10-15 minutes or until you can easily handle them. 6. Slice each potato lengthwise, and with melon baller or spoon, scoop out about ½ of the flesh to create a nice place to put the toppings. Save the excess potato in a bowl for another use. If potatoes are still too hot to handle, use a clean kitchen towel to hold underneath. 7. Brush both sides of potatoes lightly with olive oil and place skin-side down onto baking sheet. 8. Sprinkle with ½ the seasoning mixture, flip potatoes skin-side up, and sprinkle with other ½ of seasoning. 9. Bake about 3 minutes, flip all potatoes, and bake another 3 minutes, or until potatoes are golden. 10. Remove from oven, and generously top with cheese, bacon, and green onion. (If you will be topping with sour cream later, then save out green onions to sprinkle on top of the sour cream.) 11. Return to oven until cheese is melted (about 3 minutes). 12. Top with sour cream and green onions (optional) 13. Serve hot and watch them disappear!
Tip: Be sure to select potatoes of similar size so that potatoes are equally cooked.

In large mixing bowl, whisk together dry ingredients (brown rice flour, corn starch, tapioca flour, xanthan gum, salt, and baking powder). Set aside. 2. In microwavable measuring cup, heat the water to about 100° (in my microwave that takes 25 seconds) 3. To the hot water, add the yeast packet and the sugar. Give a quick stir and set aside to proof for 5 minutes. This will show that your yeast is alive. 4. While you are waiting for yeast to proof, in a medium mixing bowl, mix together your wet ingredients (eggs, apple cider vinegar, and butter). 5. Add this wet ingredients mix into your dry ingredients. Mix on low until everything is combined (it will be crumbly). 6. After 5 minutes have passed, take a look at your yeast mix. It should be starting to foam to let you know it’s alive. If it is foamy, continue to step 7. If your yeast is not foaming, it may indicate that it is not alive. Check your package for expiration date, and if needed, try a different package. **If the yeast is not alive, do not continue with the recipe, as you will just be wasting your ingredients!** Get a fresh package and proof again. 7. Once you have your yeast foaming, pour it into your batter. Beat on low until combined (about 30 seconds), then mix on medium/high for about 7 minutes more. (Please don’t skip the mixing time…it’s important to the results) Your batter should resemble a thick cake batter. (Don’t expect it to look like a gluten dough that you will knead because it won’t!) 8. Pour into prepared loaf pan and smooth the top with the back of a spoon or a spatula. 9. Cover with plastic wrap and set in a warm place to rise until dough reaches the top edge of the pan (roughly 35-40 minutes). Try to remove the plastic wrap just before dough touches it. Allow to continue rising as needed. 10. As the dough is rising, preheat your oven to 375° 11. When dough is done rising, bake on center rack until internal temperature reaches 207°. A thermometer is by far the best way to get success with bread, as every oven varies. However, if you don’t have one, as a guideline bake for 40 minutes. (Sometimes I cover mine loosely with tinfoil during the last 10-15 minutes of baking to prevent over-browning.) 12. Let cool COMPLETELY on wire rack before cutting. This will usually be at least 3 hours. It is normal for bread to sink slightly when cooling. To help keep top rounded you can cool bread on its side, rotating once in a while between sides and upright position. 13. When slicing bread, be sure to use a serrated knife to gently saw back and forth…don’t press or you will squish your beautiful loaf of bread. 14. Enjoy!
STORAGE: Whatever bread I don't use on day one, I slice and package in ziplock bags - 2 slices per bag. Then, I wrap each bag in tinfoil. I put these in the freezer. When I need a couple of slices I just take out one package. I just leave it on the counter to thaw before using.

Do your chocolate curls crumble? Turn into mush? Fail to set? I’ve been there! But after much practice and learning, I can spare you any further agony and give you tips to making perfect chocolate curls. Your friends and family will be amazed by your endless talents!
**** PASTEL COLORED WHITE CHOCOLATE CURLS RECIPE **** ***Note: The microwave times will be different for each person depending on the microwave, so watch the chocolate as you go. When in doubt, do shorter increments of time*** INGREDIENTS: 2 Tbsp. vegetable shortening 2 cups white chocolate chips Gluten free food coloring (NOT water-based. Powdered or oil-based works well)
GETTING READY: 1. Set out 2 clean baking sheets (11x16), off-set spatula, microwaveable bowl or cup, and a pastry scraper or flexible sharp-edged spatula for making curls. 2. Make space in your fridge for the baking sheets 3. Prepare a plate or baking pan with waxed paper for completed curls DIRECTIONS: 1. Separate out about ¼ of the chips and set aside for later 2. In a microwaveable cup or bowl, add shortening to the remaining chips. **The goal for the chocolate chips is to melt them only about 75%-80% of the way at 50% power. Then, quickly cool down the chocolate with the remaining chips to bring them back to a tempered state. ***Do not melt entirely in microwave at full power.** Yes, it’s easier and quicker, but you won’t get the end result that you want. Been there…done that. 3. Microwave the chips/shortening mixture for 45 seconds at 50% power. Stir. **Chips will probably not be ready yet but it’s important to go slowly. Patience is key here and every microwave heats differently. 4. Microwave again for 30 seconds at 50% power. Stir. Observe how much of the chocolate is melted. Remember, you want to have remaining chunks of chips that have not melted yet. Resist the temptation to melt them all the way. 5. At this point, depending on your microwave, you may be done, or you may need to put your chips in for another 30 seconds at 50% power, or you may need to start going at 10-15 second intervals at 50% power. Stir. 6. If needed, continue these steps at 10-15 second intervals until chocolate is melty with chunks of chips remaining. 7. Once chocolate is about 75%-80% melted with chunks of chips remaining, add in remaining chips and stir. Allow new chips to melt as you stir. These chips act to cool the chocolate, bringing it back to a tempered state. You may need to let the chocolate sit for a minute to allow the new chips to soften. Stir until smooth, with no chunks remaining. 8. Add in desired amount of food coloring and stir thoroughly 9. Place baking sheets in fridge for about one minute. Warning: if you leave your trays in the refrigerator much longer, this will cause your chocolate to set up too quickly, and your curls will crumble. 10. Place your sheets upside down on the counter and pour 1/2 the melted chocolate onto each of them. Spread with off-set spatula back and forth, covering the entire surfaces. 11. As you spread, your chocolate will begin to set. You will notice this as the chocolate will start to lose its shine. 12. Test chocolate by lightly pressing a finger to it. It should leave a light fingerprint, but not an indentation. 13. Test a corner of the chocolate with your scraping tool: Hold pan, angle tool at about 45 degrees, and push away from you. If chocolate mushes up without curling, wait a few more minutes for it to set more. Test again. Repeat until the chocolate curls. (If chocolate crumbles, the chocolate has set too much and must be re-softened.) 14. Gently move curls to waxed paper with your scraping tool and put in fridge. They will set nicely and be able to be handled to decorate your dessert. Tip: I make my chocolate curls a day in advance of making my dessert. I put them in an airtight/shallow/wide/rigid storage container to protect from moisture (and from being crushed by my kids going in and out of the fridge!) * Real World Example :) I just finished 2 trays of curls and it took just over 11 minutes for them to set enough to curl (it's a very warm day though). This time included me putting them into the fridge for 1 minute exactly to help them finish firming up enough. The temperature in your kitchen will affect this time.

INGREDIENTS:
3 lbs. red potatoes 2 Tbsp. extra virgin olive oil 2 tsp. salt ½ tsp. black pepper 2 ½ tsp. garlic powder 3 Tbsp. minced fresh parsley (I prefer flat leaf) 2 bell peppers (1 red/1 green) 1 small white onion
GETTING READY: 1. Spray a baking sheet with gluten free non-stick cooking spray 2. Set out a large mixing bowl of cold water 3. Preheat oven to 425° 4. Wash potatoes, peppers, and parsley. (dry the parsley with a tea towel or paper towels)
DIRECTIONS: 1. Cut potatoes into equal bite-sized wedges and place into cold water. Let sit 1 hour. 2. Cut peppers and onion into strips. Set aside. 3. Mince the parsley. Set aside. 4. In small bowl, mix together salt, pepper, and garlic powder. 5. After one hour, drain the water out of the bowl and rinse potatoes. Drain again and leave potatoes in bowl. 6. Drizzle on the olive oil and mix to coat all potatoes. 7. Sprinkle the seasonings on potatoes, a little at a time, mixing around potatoes as you go so that they are evenly coated. 8. Put potatoes onto baking sheet, single layer. 9. Bake potatoes by themselves for 20 minutes. 10. Remove potatoes from oven and turn potatoes. 11. Now, add the peppers and onions and return to oven for 20 more minutes, or until potatoes are golden and tender (or a little longer if that is your preference). 12. When potatoes are done cooking, remove from oven, sprinkle with parsley, and gently mix together with spatula. 13. Serve hot!

½ cup + 1 Tbsp. white rice flour (2.9 oz.) ½ cup brown rice flour (2.0 oz.) ¼ cup corn starch (1.2 oz.) ¼ cup potato starch (1.3 oz.) ¾ tsp. xanthan gum ½ tsp. baking soda ½ tsp. salt 1 stick butter, melted…cooled 1 tsp. vanilla 1 egg + 1 egg yolk ½ cup + 1 Tbsp. light brown sugar, packed ¼ cup granulated sugar 1 ½ cup semi-sweet chocolate chips
* IMPORTANT…when measuring out your flours, DO NOT scoop your measuring cup into a tub or bag. This will result in using more flour than called for. Instead, pour or spoon the flour into your measuring cup, and level off with flat side of a knife. If possible, measure your flours by weight for best accuracy.
GETTING READY: 1. Line cookie sheets with parchment paper
DIRECTIONS: 1. In large microwavable mixing bowl, microwave butter until just melted. Set aside. 2. In medium bowl, stir or whisk together white rice flour, brown rice flour, corn starch, potato starch, xanthan gum, baking soda, and salt. Set aside. 3. To the large bowl with the melted butter, add brown sugar, granulated sugar, vanilla, egg, and yolk. Mix well. 4. Now add the dry ingredients to the wet ingredients, ½ at a time, mixing after each addition. 5. Add in chocolate chips and stir to combine. 6. Here’s the sad part…let the dough rest for 30 minutes. Don’t skip this part! This gives the gluten free flours time to absorb the liquids (this is a great time to clean up the kitchen anyway ). At some point while the dough is resting, preheat your oven to 375° so that it’s ready when the dough is. 7. Create cookie dough balls with small scooper, and place on cookie sheet 8. Bake at 375 degrees for 8-9 minutes or until edges are slightly browned. Centers will appear slightly undercooked, but will finish cooking on rack. 9. Leave cookies on pan for a minute or two. I like to use my spatula to gently go around the edges of the cookies to make them more circular. (not necessary, but it makes them prettier) Do this quickly before the cookies firm up. 10. Move cookies to cooling rack with spatula. Careful…they will be soft until cooled.
Tips: 1. Gluten free flours don’t behave like gluten flours, so letting the dough rest is important. 2. Taking the cookies out when centers are still soft is important! 3. These cookies are best on the day you bake them, so eat up!

There’s just something about a big breakfast with homemade pancakes. The flavor of these pancakes is great (not to mention the heavenly aroma that fills the house). This recipe is easy to make and honestly, almost impossible to ruin. They are soft, fluffy, and flavorful...just the way pancakes should be. My favorite add-in is mini chocolate chips but, of course, the possibilities are endless. Enjoy!
HOMEMADE PANCAKE RECIPE gluten free (makes 12 medium-sized pancakes using a 1/3 cup measure OR 16 small-sized pancakes using a 1/4 cup measure)
INGREDIENTS:
4 Tbsp. butter, melted and cooled 1 1/2 cup milk 4 Tbsp. white vinegar 2 cup white rice flour 1/2 cup cornstarch 1/2 cup tapioca flour 3 Tbsp. granulated sugar 2 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 2 egg
GETTING READY: 1. Set out griddle or pan (about 325 degrees griddle, or medium temp. pan) 2. Melt butter and set aside to cool
DIRECTIONS: 1. In a large mixing bowl, combine milk and vinegar. Set aside. 2. In a medium mixing bowl, stir or whisk together white rice flour, cornstarch, tapioca flour, sugar, baking powder, baking soda, and salt. 3. At this point, preheat your griddle to medium heat (or a little less than medium) 4. As soon as butter is cooled, whisk butter and egg into the milk/vinegar mix. 5. Add flour mixture into the milk mixture and whisk together. 6. Batter will be somewhat foamy…don’t worry this will help the pancakes to fluff up nicely * At this point, I like to do one little tester pancake. If it is not as puffy as I prefer, I add a little more white rice flour (about 2 Tbsp. at a time), and whisk it in. Then I repeat test until happy :) 7. Pour batter onto griddle in desired amount. 8. Flip pancakes when the bottom is golden. They are done when center is cooked and bottom is golden. 9. Enjoy with gluten-free syrup!

Batter will be thin…don’t worry! You can pour your batter into a tall measuring cup for easy pouring, but not necessary. 6. Fill cupcake liners 2/3 full and place into oven immediately (I use a ¼ cup measuring cup to scoop it into the liners and this works out perfectly to 12 cupcakes). 7. Bake for about 17-20 minutes or just until a toothpick inserted into the center of a cupcake comes out clean. 8. Remove cupcakes carefully…they will be hot and soft. Let cool completely before frosting. Tip: These cupcakes work best with piped on frosting. If you are spreading on frosting then make sure the frosting is soft.

Chocolate Glaze: 1. In microwave-safe bowl, combine chocolate chips, unsalted butter, and corn syrup. 2. RECIPE: TRADITIONAL STYLE PIZZA CRUST gluten free INGREDIENTS:
¼ cup brown rice flour ¼ cup white rice flour ¾ cup potato starch ½ tsp. salt 1 tsp. xanthan gum 1 tsp. garlic powder 1 tsp. baking powder 1 tsp. olive oil 2/3 cup hot tap water 1 ½ tsp. active dry yeast 1 tsp. granulated sugar 1 tsp. unflavored gelatin
GETTING READY: 1. Cut a piece of parchment paper to the size of your pan 2. Proof your yeast by adding the yeast and the sugar to 1/3 cup hot tap water. Stir gently and set aside. This will test to see if your yeast is still active. Yeast should start to foam in a few minutes. 3. To the other 1/3 cup hot tap water, add gelatin and stir to dissolve. Set aside. 4. Preheat oven to 400 ̊ and place in your empty baking sheet or pizza pan to pre-heat.
DIRECTIONS: 1. In a large mixing bowl, stir together brown rice flour, white rice flour, potato starch, salt, garlic powder, baking powder, and xanthan gum. 2. Now add olive oil, yeast mixture, and gelatin mixture. Mix at medium speed until dough is smooth. Dough will be sticky and will not resemble gluten dough. That’s o.k.! 3. To roll out dough: Spray your pre-cut parchment paper with non-stick cooking spray and lay on work surface. Place dough in center, and lay another parchment on top (also sprayed with non-stick spray.) 4. Roll to desired thickness, remove top paper, and finish shaping dough by hand. Create a slightly thicker outer edge on your dough to keep in sauce and toppings. 5. Loosely cover with plastic wrap, and set in warm place for 30-40 minutes. Dough will rise slightly. 6. After 30-40 minutes, remove heated pan from oven. 7. Remove plastic from dough and transfer to pre-heated baking sheet by sliding parchment carefully over to heated pan. 8. Bake for 6-7 minutes. You will bake it again after topping the pizza. 9. Remove from oven, and move pizza crust and parchment off of hot pan to a cutting board to top. 10. Increase oven temperature to 450 ̊. Return empty pan to oven to pre-heat again. 11. Top your pizza with gluten free sauce, cheese, and favorite toppings. 12. Remove pan from oven and carefully slide the topped pizza onto the heated pan without the parchment. (Trust me on this one…it will help to create a slightly crispy crust that is so important to great pizza!) 13. Bake for about 8-9 minutes or until toppings are done and crust is lightly golden. 14. Remove and enjoy!!!

GETTING READY: 1. Mince onions 2. Line a baking pan with foil. Spray generously with cooking spray. 3. Preheat oven to 350 ̊

Gently mix together with your hands, and form into meatballs using a scooper. 4. Set meatballs on pan. 5. Bake cocktail-sized meatballs for about 18-20 minutes, turning meatballs ½ way through cooking. In either case, bake until fully cooked. Check largest meatball for doneness.
While meatballs are cooking, prepare teriyaki sauce as follows:
6. In a medium-sized saucepan over medium heat, whisk together brown sugar, water, cornstarch, soy sauce, sesame oil, garlic powder, ginger, and vinegar. 7. Heat and whisk until bubbly, then reduce to simmer. Continue to heat for a few minutes, and check consistency. 8. If you want to thicken the sauce a bit, in a small bowl add 1 tsp. cornstarch with a couple tablespoons water. Stir. Add this mixture to teriyaki sauce while whisking. Wait a few minutes and re-check consistency. 9. Repeat this process until desired consistency is met. 10. Stir in cooked meatballs to coat and simmer a few minutes. 11. Optional: Top with sesame seeds and green onion 12. Serve hot!

But after much practice and learning, now I can spare you any further agony and give you tips to making perfect chocolate curls that you can count on. Your friends will be amazed by your endless talents! These chocolate curls are a perfect way to dress up any dessert. Use them on cakes, pies, tiramisu, ice cream, you name it. Makes: Enough to generously top one cake.
GETTING READY: ¬¬¬ 1. Set out a clean baking sheet, off-set spatula, microwaveable bowl or cup, and a pastry scraper or flexible sharp-edged spatula for making curls. 2. Make space in your fridge for the baking sheet 3. Prepare a plate or baking pan with waxed paper for completed curls
DIRECTIONS: 1. Separate out about ¼ cup or a little less of the chips and set aside for later 2. In a microwaveable cup or bowl, add shortening to the ¾ cup of chips.
**The goal for the chocolate chips is to melt them about 75%-80% of the way at 50% power. Then, quickly cool down the chocolate with the remaining chips to bring them back to a tempered state. Do not melt entirely in microwave at full power. Yes, it’s easier and quicker, but you won’t get the end result that you want. Been there…done that.
3. Microwave the chips/shortening mix for 30 seconds at 50% power. Stir. **Chips will not be ready yet but it’s important to go slowly. Patience is key here. 4. Microwave again for 30 seconds at 50% power. Stir. Observe how much of the chocolate is melted. Remember, you want to have remaining chunks of chips that have not melted yet. Resist the temptation to melt them all the way. 5. At this point, depending on your microwave, you may need to put your chips in for another 30 seconds at 50% power, or start going at 10-15 second increments at 50% power. Stir. 6. Continue these steps at 10-15 second increments until chocolate is melty with chunks of chips remaining. 7. Once chocolate is about 75%-80% melted with chunks of chips remaining, add in remaining chips and stir. Allow new chips to melt as you stir. These chips act to cool the chocolate, bringing it back to a tempered state. You may need to let the chocolate sit for a minute to allow the new chips to soften. Stir until smooth, with no chunks remaining. 8. Place baking sheet in fridge for about one minute. Much longer than this will cause your chocolate to set up too quickly. 9. Place your sheet upside down and pour melted chocolate onto pan. Spread with off-set spatula back and forth, covering the entire surface. 10. As you spread, your chocolate will begin to set. You will notice this as the chocolate will start to lose its shine and become more matte. 11. Test chocolate by lightly pressing a finger to it. It should leave a light fingerprint, but not an indentation. 12. Test a corner of the chocolate with your scraping tool: Hold pan, angle tool at about 45 degrees, and push away from you. If chocolate mushes up without curling, wait a few more minutes for it to set more. Test again. Repeat until the chocolate curls. (If chocolate crumbles, the chocolate has set too much and must be re-softened.) 13. Gently move curls to waxed paper with your scraping tool and set in fridge. They will set nicely and be able to be handled to decorate your dessert.
Tip: I like to make my chocolate curls a day in advance of making my dessert. I put them in a shallow/wide storage container to protect from being crushed by my kids going in and out of the fridge

Stir in M&Ms, or any other gluten free additions that you like. (Peanut butter chips, nuts, etc.) 5. Use a small scooper to make cookie balls on baking sheet. 6. Bake for about 11-13 minutes.
Tip: Cookies will be very soft upon removing from oven. Let cool slightly before moving to a wire rack
***RECIPE*** GLUTEN FREE FLOUR MIX: (mix this up prior to starting the cookie recipe)
2 cups white rice flour 2/3 cup cornstarch 1/3 cup tapioca starch

I like to double this flour mix recipe to have some extra for the future.
INGREDIENTS: 4 boneless, skinless chicken breasts 1 can tomato sauce (15 oz.) May not use all of this. 2 cloves garlic, minced 1 tsp. chili powder 1/2 tsp. cumin 2 tsp. sugar ½ cup cilantro, finely chopped ½ cup white onion, diced small ½ tsp. salt 1 small can mild diced chiles 1-2 Tbsp. hot diced jalapenos Gluten free tortillas
Optional for toppings: lettuce salsa shredded cheese sour cream
GETTING READY: 1. Mince garlic 2. Wash chicken and trim excess fat 3. Wash and chop cilantro 4. Dice onion
DIRECTIONS: 1. Place chicken in saute pan and pour enough water in to cover chicken. Bring to a boil. 2. Reduce heat, cover, and simmer 15-20 minutes, or until chicken is fully cooked. 3. Transfer chicken to a baking dish and shred with 2 forks. Set aside. 4. In saute pan, over medium heat, cook onion in a few tablespoons oil. When onion is translucent, add garlic. Cook just a couple minutes more, being careful not to burn garlic. 5. Pour in tomato sauce, chili powder, cumin, sugar, salt, hot jalapenos and mild chiles. Start with only 1/2 the can of sauce until chicken is added. Then add more according to your preference. Some people like it more saucy. 6. Stir. Reduce heat. 7. Add in chicken and simmer 5-10 minutes. 8. Add cilantro and stir. 9. Serve with gluten free taco shells (hard or soft). Top with cheese, lettuce, tomato (or salsa), and sour cream.

For this Gluten Free Old-Fashioned Buttermilk Cornbread recipe, you will need some gluten-free flour mix. Below are the directions to the one I used in this video, but you can also find gluten-free flour mixes in the grocery store if you are short on time. However, I have not tried any of these mixes and cannot say how they would alter the end result of this recipe.
GLUTEN FREE FLOUR MIX: (mix this up prior to starting the cornbread recipe)

I like to double this flour mix recipe to have some extra for the future, but if you are only making this one gluten free recipe, you could easily half the flour recipe instead.
GLUTEN FREE OLD FASHIONED BUTTERMILK CORNBREAD RECIPE: INGREDIENTS:
½ cup butter 2/3 cup white sugar 2 eggs 1 cup buttermilk 1 tsp. baking soda 3 tsp. baking powder 1 cup cornmeal 1 ¼ cup gluten free flour mix ½ tsp. salt 1 tsp. xanthan gum ½ cup milk
DIRECTIONS: 1. Preheat oven to 375 degrees, and spray an 8x8 dish with cooking spray, or put liners in cupcake tray 2. In medium saucepan, melt butter over low heat 3. Remove from heat and stir in sugar. Set aside. 4. In medium-sized bowl,, whisk together all other dry ingredients including gluten free flour, baking soda, baking powder, cornmeal, xanthan gum, and salt. Set aside. 5. Into butter/sugar mixture, add eggs and mix well. Stir in buttermilk and milk. 6. Add butter mixture into flour mixture and mix well. 7. Pour batter into prepared baking dish 8. Bake at 375 degrees for 15 minutes (cupcake size) or for 25-30 minutes (8x8 baking dish). 9. Insert/remove toothpick and when it is clean, your cornbread is done. Serve warm. 10. Enjoy!

Add some seasoned chicken to this dish to make it a main dish. Made with fresh parmesan cheese, garlic, and heavy cream. Only a few ingredients are used to make this amazing addition to your dinner.
1 stick butter 2 cups heavy cream 1 cup parmesan cheese, shredded (not from a canister!) Parmigiano-Reggiano if possible ¼ tsp. salt ½ tsp. black pepper 2 large cloves garlic 2 Tbsp. extra virgin olive oil 8 oz. Gluten free fettuccini (or your favorite GF pasta) broccoli
DIRECTIONS: 1. Bring large pot of water to a boil (for the pasta) 2. Crush and mince the garlic 2. In a sautee pan over medium low heat, brown garlic lightly in the olive oil (only takes a minute or so…don’t let it scorch!) 3. Add butter and melt 4. Add pasta to boiling water. Cook to al dente (about 8-10 minutes). Drain when done. 5. To the garlic/butter pan, add heavy whipping cream, salt, and pepper. Bring to simmer, whisking. Simmer about 5 minutes. 6. Slowly add parmesan to sauce, 1/3 at a time, allowing for melting between each addition. Whisk quickly. 7. Continue simmering and whisking until sauce has thickened. 8. As sauce is thickening, steam broccoli. Drain. 9. When sauce has reached desired consistency, add pasta and stir. 10. Gently stir in broccoli. 11. Serve immediately.

INGREDIENTS FOR CHOCOLATE CAKE: 1 cup white rice flour ½ cup potato starch ½ cup tapioca starch 1 cup unsweetened cocoa powder 4 tsp. baking powder 1 ½ tsp. baking soda 1 tsp. salt 1/2 tsp. xanthan gum 2 cups white sugar 1 cup milk ½ cup vegetable oil 2 eggs (room temp.) 2 tsp. vanilla extract 1 cup water
DIRECTIONS: 1. In a large mixing bowl, whisk together white rice flour, potato starch, tapioca starch, cocoa powder, baking powder, baking soda, salt, and xanthan gum. 2. Stir in sugar 3. Add milk, oil, eggs, vanilla, and water 4. Mix on low until combined, then on medium for at least 3 minutes more 5. Pour into pans and bake for 20-25 minutes or just until toothpick inserted into the center comes out clean 6. Cool before frosting
BUTTERCREAM FROSTING: Ingredients: 1 cup butter 4 +/- cups confectioner's sugar (to desired consistency) 2 tsp. vanilla a few teaspoons milk (as needed for desired consistency)
DIRECTIONS: 1. Soften butter 2. In mixing bowl, cream together butter, and vanilla 3. Slowly mix in confectioner's sugar until fluffy. 4. To thin frosting, add milk one teaspoon at a time, mixing after each addition, until desired consistency is reached 5. To thicken frosting, add more powdered sugar, 1/4 cup at a time, mixing after each addition, until desired consistency is reached

This Pasta Milano is a delicious pasta dish with a flavorful creamy garlic sauce topped with seasoned chicken and parmesan. I know that there are a lot of ingredients in this recipe, but trust me...it's so worth it!
Ingredients: For the Chicken: A few Tbsp. olive oil 1 tsp. garlic powder ½ tsp. salt 1 tsp. black pepper 4 boneless, skinless chicken breasts ½ cup gluten free flour mix* 1/2 cup milk
For the Cream Sauce: 1 cup chicken broth 4 Tbsp. butter ½ tsp. red pepper flakes ½ tsp. ground black pepper 1 head of garlic, roasted and mashed 1 small jar sun-dried tomatoes 1 quart heavy cream 2 Tbsp. fresh basil, chopped 1 bunch green onion, chopped (about ½ cup) ½ tsp. salt
Other: 12 oz. gluten free pasta (I like penne or bowtie for this recipe, but pick your favorite) Parmesan cheese to top
Getting Ready: 1. Roast the garlic, then mash up a little until creamy 2. Drain and finely chop sun-dried tomatoes 3. Finely chop basil and green onion 4. In soup bowl, mix together GF flour, garlic powder, salt, and pepper. Set aside. 5. Trim fat off chicken. Wash and pat dry. 6. Pound chicken until even (about ½ in. thick) 7. Pour ½ cup milk into soup bowl for dipping chicken. 8. Dip each piece of chicken into milk, and dredge through flour mix to coat. Refrigerate. 9. Put a large pot of water on to boil for the pasta.
Directions: Step 1 - Sauce 1. In large saucepan or sautee pan over low heat, melt butter, add garlic, and cook for 30 seconds. 2. Add tomatoes, red pepper , black pepper , salt, and chicken broth 3. Increase heat to medium. Bring to boil. 4. Reduce heat and simmer uncovered until tomatoes are tender (about 7 minutes). 5. Add cream and bring to a simmer, stirring. 6. Reduce heat to low. Add basil and green onion. 7. Simmer on low until sauce thickens slightly, as you start Step 2. 8. After simmering 5 minutes or so, if your sauce is not as thick as you would like, you can add a little cornstarch slurry as a thickener. (see below)
Step 2 – Pasta 1. Put pasta into boiling water and cook just until al dente 2. Drain when done 3. As pasta is cooking, move to Step 3
Step 3 – Chicken 1. In a large skillet, warm the oil over medium heat. 2. Cook chicken until golden brown, fully cooked, and no pink remains inside. (about 7 minutes each side, but this depends on thickness of chicken). 3. Transfer to cutting board, slice each piece into 5-7 strips.
Step 4 – Serve! 1. Gently stir pasta into cream sauce when sauce has thickened, and then transfer to serving dish. 2. Lay sliced chicken on top of pasta and finish with freshly grated parmesan cheese.

HOW TO ROAST GARLIC: 1. Preheat oven to 400 ̊ 2. Peel the cloves of garlic 3. Place garlic on a square of aluminum foil 4. Wrap up foil and twist tight at top to keep steam inside 5. Place in oven and bake for 20-30 minutes or until soft and tender 6. Be careful when opening foil, as hot steam can rush out
HOW TO MAKE A CORNSTARCH SLURRY: Simply put 1 tbsp. water and 1 tbsp. cornstarch into a small glass or measuring cup. Mix well. To thicken sauce, add a little of this slurry and stir. Wait a few minutes and if necessary, add more slurry, just until sauce is thick enough. Do Not Add Cornstarch Directly to Your Sauce!! Only add it as a slurry or you will most likely ruin your sauce.
