We did the test, see what we thought on wrapped vs unwrapped ribs! Grillaholics SPG and SPG Twisted!
• Started with 3 racks of ribs for our wrap vs unwrap experiment.
• Coated the 2 racks we were using for the experiment with Grillaholics SPG Rub. We coated the extra rack with Grillaholics SPG Twisted Butter Flavor.
• Had the Rec Tec 380 running at 225 for the entire cook.
• Put them on for 3 hours at 225 and let them on for the first 3 hours. We did check to see how they looked at 1 ½ hours and just let them go as the were.
• At the 3 hour mark, we wrapped one of the test racks along with the extra rack. But left the other test rack unwrapped.
• Left these go for 1 ½ hours.
• We unwrapped the 2 racks and let on for 1 more hour.
• Pulled them off and let rest for a few minutes.
Summary: You could see the difference in the 2 test racks, the unwrapped had a darker color, but both were nice and tender. My opinion was the unwrapped rack had a nice bark layer and the taste was excellent and the wrapped rack was fall off the bone, with less bark.
I am still a fan of wrapping, but we had no trouble eating the unwrapped rack and enjoyed the nice bark!
