Hey guys! Third part of our series with Gabby - today we're cooking lunch.
Seared white fish with green beans and roasted sweet potato.
Fish:
Coconut oil
Pinch of salt
Piece of white fish
Green beans:
Green beans
Coconut oil
1 clove garlic, crushed
Salt
Sesame seeds
Cilantro, chopped
Sweet potatoes:
Sweet potato
Ginger-turmeric coconut aminos sauce
Sauce:
One lemon
1/2 cup tamari
1 tablespoon honey
2 tablespoons toasted sesame oil
One garlic clove, crushed
2-inch piece of ginger, grated
Chili (to taste)
Sesame seeds (to taste)
Chopped scallions
1) Heat your oven to 350F
2) Chop your sweet potatoes into cubes. Rub them with the ginger-turmeric sauce, or if you don’t have this, rub with coconut oil and salt. Then put your potatoes in the oven until golden and soft, around 30-45 mins. While potatoes are in the oven, prepare the below.
3) Mix together juice of one lemon, big tablespoon of honey, 2 tablespoons of toasted sesame oil, and half a cup of tamari. Add one crushed garlic clove, grated ginger, chili to your preferred spiciness, chopped scallions, and sesame seeds. Try it and see what it needs more of—if not sweet enough, add more honey. If not salty enough, add more salt/tamari. If not sour enough, more lemon. Set this sauce aside.
4) Fry your green beans in coconut oil, 1 crushed clove of garlic, and a pinch of salt. Add sesame seeds at the end. When plated, pour some of the sauce above on it, and garnish with chopped cilantro.
5) Start frying fish in pan with coconut oil and pinch of salt on low heat. Check it constantly and don’t overcook your fish. Use low heat so it cooks slowly, and add a lid so it cooks through nicely.
6) Serve fish, green beans and sweet potatoes with the sauce above.
