Failure? Almost! This was not my best cook, but we saved these Wagyu NY Strips from Hassle Cattle Company were outstanding. The Slow ’N Sear Kettle did its job!

• Got 2 nice 1 to 1 1/4” Wagyu NY Strips from Hassle Cattle Company!
• Seasoned with kosher salt only 12 hours in advance and dry brined them in the fridge.
• Set up the SNS Kettle with the Slow N’ Sear basket and cooked them directly over heat until finished.
• The entire process only took about 6 minutes to get to temperature for medium rare.
Summary: NY Strip are not my favorite, but these were outstanding. As you saw, my technique was not that best on this cook, but they turned out fine and were still in the medium rare window.
