See how we make these venison/beef burgers with pepper jack cheese on the Blackstone.
• Started with 4 nice ¼ lb Venison, Beef and High temp pepperjack cheese and some homemade bacon.
• Formed the patties before cooking and put into the freezer for about 30 minutes to help keep their shape until I put them on the Blackstone.
• Was curious how the high temp pepperjack would hold up? It worked great!
• Did the bacon first and got that ¾ of the way done to use the bacon grease for the burgers.
• Kept flipping them until they reached about 160F.
• Used a nice brioche roll, toasted them. Added tomato, onion and mustard. Did not add cheese since it was already in the burger.
Summary: These were 70% venison, 30% beef trimmings and we added high temp pepperjack cheese. We also added some salt and pepper when we made the ground mixture. These were excellent
