Vegan Michelin restaurants are not that common here, so we made sure we stopped by Folke in Kitsilano in Vancouver, BC, to check out their brand-new vegan brunch — and yes, we ordered the chicken and waffles and baked strata. The verdict? You’ll have to watch the episode to see what we thought 👀. We’d also love for them to have a brunch tasting menu so we can try more of their brunch items!
Folke’s menu is creative, locally sourced, and fully plant-based, with no tipping (hospitality is included!). They even have a cake table filled with house-made sweets we’re already planning to come back for 🍰
