Did the weather change overnight where you are too? It's suddenly feeling like autumn recipe season and good timing too! When a viewer submitted this #reciperequest for Vegan Chicken Tetrazzini, I just had to make it!

Chicken Tetrazzini is a American dish named after an Italian opera singer. The baked pasta dish traditionally includes chicken and mushroom in a cream sauce baked with cheese.

Since I have to be keto / low-carb for health reasons, I included my method for making zucchini noodles that won't go soggy. Feel free to use any kind of pasta noodle; it will be delicious!

By the way, for my newer vegan keto-ers, you may want to switch the cashew sauce for vegan heavy whipping cream (like silk's whipping cream which is 0 carb) especially if you don't feel like you're fat-adapted yet or if you're more sensitive to carbs.
