I recently came up with this Vegan Ground beef, and I'm stoked on it! This is a really easy plant-based meat substitute, that works so well with fajitas, quesadillas, or tacos. Recipe
- 1 Cup of Black Rice (Or brown)
- 1 Cup of Quinoa
- 4 Cups of Water
- 1 Tbsp of Salt
- 1 Tbsp of MSG or Mushroom Seasoning (Optional)
- 1 Tbsp of Salt
- 1 Tbsp of Chili Powder
- 1 Tbsp of Cumin
- 1 Tbsp of Garlic Powder
- 1 12 oz Can of Black or Kidney Beans
Instructions
1. Rinse your black rice, if not already pre-rinsed. Add rice to a pot with 4 Cups of water, salt, and optional mushroom seasoning. Bring to a boil.
2. Once it reaches a boil, add Quinoa, and reduce heat to a simmer on low. As it evaporates give it a stir every few minutes. When water is nearly evaporated, add beans, and spices and mix. When water is fully evaporated it's done. This will make at least 6 servings of ground beef.

3 Cloves of Garlic (Chopped)
2 Tablespoons of Tomato Paste
2-3 Cups of Hot Water
1 Lemon (Squeezed)
Salt and Pepper to Taste
Recipe:
- Fry the Onions in a Tablespoon of Olive Oil, on medium high heat.
- Add Tumeric, and Salt to Taste.
- Make space for the beef, and add it to the Pan. Brown Beef on each side.
- Add Bell Peppers, Garlic, Tomato Paste, Lemon, Salt, Pepper, and water just below covering the beef and mix it around. Cover with a lid and cook for 1 hour, on low.
-Slice the eggplant to a 1/2 inch thickness, salt one side and leave to rest for 20-30 minutes. The eggplant should sweat out, and you can pat them down with a paper towel to remove bitterness. Fry eggplant slices in Olive Oil in a separate pan. Fry both sides till brown and soft. When fully cooked, add eggplant to stew.
- After 1 hour, check the stew, the meat will likely still be tough. Add water if necessary (all water is evaporated). Then cook for another hour to hour and a half, or till meat is tender.

![How to Make a Healthy Breakfast Hash
Heres how to make a healthy breakfast Hash for dinner with Chorizo, kale, potatoes, onions, and eggs. Its sort of like a pan fried hash brown casserole. Recipe Below
INGREDIENTS (4 Servings)
2 Tablespoons of Olive Oil
1 Cup of Onion (Chopped)
2 Cups of par boiled potatoes [Russet or Yukon] (Chopped)
1 Cup of Bell Pepper (Chopped)
2 Chorizo Sausages (Fried and Chopped)
1 Tablespoon of Garlic (Minced)
2 Cups of Kale (Chopped)
4 Eggs
2 Tablespoons of Cheddar
1/2 Avocado for garnish (Optional)
1 Teaspoon Paprika
1/2 Teaspoon Cumin
Salt and Pepper to taste
DIRECTIONS
Fry Onions with Olive Oil in large pan on medium high heat. Salt to Taste. Add parboiled potatoes and fry, being careful not to mix to much to develop a crust. Add garlic, and spices. Cook for 15 - 20 more minutes.
In separate pan, fry Chorizo, till browned on the outside. Remove chorizo from the pan and chop. Add chopped bell peppers and chopped chorizo to this pan, and fry for a couple minutes till Chorizo is cooked and crispy. Add this to main pot with potatoes.
With the empty pan, add a dash of oil, and fry the kale till its a bright vibrant green. Salt to taste. Add to main pan.
