Today we will be making some homemade, plant based tater tots. These are packed with chickpeas, cauliflower, and more to provide proper nutrients and protein. Let's make some tots!

You will need a big wok, large mixing bowl, cutting board, chopping knife, space to prep the tots, and no fear of open pan frying.
Ingredients:
1/4 Cup Nutritional Yeast
1 Cup Minced Onions
1 1/2 Cups Breadcrumbs
19oz Can of Chickpeas
1 Large Head of Cauliflower
1 tbsp Salt
1 tbsp Pepper
1. Chop up the cauliflower and portion into the blender. Blend it to a cauliflower pulp. Then using paper or cloth to extract as much water as possible from the blend. Put that in a large mixing bowl.
2. Pulse the chickpeas to hummus consistency and do a quick pulse to the onions. Add these to the mix.
3. Add nutritional yeast, breadcrumbs, and salt/pepper.
4. Thoroughly mix together in bowl.
5. Let's shape them! Roll the mixture into a tightly formed ball then roll out into tater tot shape. (Add flour to mix if still a bit water heavy)
6: Prep wok on med-high. Add your cooking oil and bring it to 350 degrees. Cook tots until golden brown on both sides.
Bam! Easy protein packed snack. Any you do not cook now you can freeze for later. Enjoy!
