Little different take on a Cowboy Quiche recipe I found. This adds some Mexican cheese and smoked paprika. Very tasty!
Ingredients:
2 ready made pie crusts
2 yellow onions, chopped
8 slices of bacon
2 tablespoons salted butter
8 eggs, beaten
1 1/2 cups heavy whipping cream (or half and half)
2 teaspoons smoked paprika
12 ounces grated Mexican cheese
salt and pepper to taste

Directions:
1. Fry onions in butter over medium low heat until caramelized (about 15-20 minutes), stirring occasionally. Set aside to cool.
2. Fry bacon until chewy. Chop into large bits and set aside to cool.
3. Preheat oven to 400F.
4. In a large mixing bowl, whip eggs, cream, paprika, and salt/pepper, together until well blended. Add onion, bacon, and cheese, and mix until well blended.
5. Pour mixture evenly into pie crusts. Leave a little room at the top for expansion. Place in oven and cover lightly with aluminum foil. Bake 40-45 minutes covered. Remove foil and bake until crust golden brown and quiche is set (about another 10-15 minutes).
6. Remove and let cool for 15 minutes before cutting.
