Hot German Potato Salad  @PhyllisStokes

You guys gave me this idea! This paired nicely with some German sausages and red cabbage. Easy and very delicious!
Ingredients:
6 Yukon gold potatoes, peeled and diced
5 slices of bacon
1 onion, diced
1/2 cup white vinegar
4 tablespoons water
1 1/2 tablespoons sugar (more or less to taste)
2 teaspoons salt
1/4 teaspoon ground black pepper
1 cup chopped fresh parsley (or more to taste)

Directions:
1. In a large pot, bring salted water (enough to cover potatoes) to boil. Add potatoes and boil until they are easily pierced by a fork (about 10 minutes). Drain and set aside.
2. In another pot, fry the bacon up over medium high heat until crisp. Remove bacon, crumble up, and set aside. Keep the grease.
3. In the same pot, add the onions and sauté in the bacon grease over medium heat until browned (6-8 minutes).
4. Add vinegar, salt, water, sugar, and pepper. Mix and bring to a boil.
5. Once boiling, add potatoes back in along with half of the crispy bacon bits. Cook until heated through (3-4 minutes).
6. Stir in the rest of the bacon and chopped parsley and mix.

Serve warm.
