A simple, quick and delicious thyme cordial recipe for this micro episode.
This refreshing cordial is easy to make, refreshing and a little unusual. I particularly like making this when I can use thyme fresh from the garden.

Recipe -
500g Caster Sugar
375g Water
20g Ascorbic Acid
4-6 Springs thyme
Zest 1 lemons
Bring the sugar, water & ascorbic acid to a simmer to make a syrup.
Pour the hot syrup over the lemon zest and thyme and leave to cool and infuse at room temperature.
Strain the cordial and then bottle and store in the fridge for the longest life span.
