Ingredients:
Roasting Peanuts
PEANUTS | मूंगफली 2 TBSP
Thecha (Spicy Green Paste)
GREEN CHILLI | हरी मिर्च 5 NOS.
FRESH CORIANDER STEMS | हरा धनिया की डंठल A HANDFUL
GARLIC | लहसुन 10–12 CLOVES
PEANUTS | मूंगफली 2 TBSP
CUMIN SEEDS | जीरा A PINCH
GROUNDNUT OIL | मूंगफली का तेल 1 TSP
FRESH CORIANDER | हरे धनिये की डंठल A HANDFUL
SALT | नमक A PINCH
WATER | पानी A SPLASH
Veggies & Paneer Prep
CABBAGE | पत्ता गोभी 1/3 SMALL SIZED
TOMATO | टमाटर 1 MEDIUM SIZED
CAPSICUM | शिमला मिर्च 1 SMALL SIZED
ONION | प्याज़ 1 MEDIUM SIZED
PANEER | पनीर 200–250 GRAMS
Thecha Paneer Rice
GROUNDNUT OIL | मूंगफली का तेल 1 TBSP
CUMIN SEEDS | जीरा 1/2 TSP
CURRY LEAVES | कड़ी पत्ता A HANDFUL
SALT | नमक A PINCH
SUGAR | शक्कर A PINCH
COOKED RICE | पाके हुए चावल 4 CUPS
LEMON JUICE | नींबू का रस OF 1/2 LEMON
FRESH CORIANDER | हरा धनिया A HANDFUL (CHOPPED)
Method:
Start by roasting the peanuts. Place a pan on high flame and let it heat slightly. Add the peanuts and roast them until nicely toasted. Once done, transfer them to a bowl and let them cool completely. These need to be crushed later and added on top.
In the same pan, add green chillies, coriander stems, garlic, and peanuts. Dry roast everything properly until you see dark brown spots and light charring.
Switch off the flame. Add cumin seeds and groundnut oil, toss quickly, and transfer everything to a bowl to cool.
Once cooled, transfer this mixture to a mixer jar. Add fresh coriander, salt, and a little water. Grind into a fine paste. The thecha is ready.
Now prepare the vegetables. Thinly slice the cabbage into juliennes. Cut the tomato in half, remove the eye, and slice it lengthwise. Cut the capsicum by removing the core and slicing it into thin strips, keeping the skin side down. This helps you cut the capsicum more safely and effectively. Slice the onions thinly as well. Keep all the vegetables ready.
Cut the paneer into strips and then into bite-sized cubes.
Take the roasted peanuts and crush them coarsely using a mortar and pestle.
Now for cooking, take a kadhai and place it on a high flame. Let it heat well. Add groundnut oil and allow it to heat.
Add cumin seeds and curry leaves, let them crackle.
Add sliced onions and sauté lightly. Once they start softening, add all the remaining vegetables and cook on high flame for 2–3 minutes while stirring. Keep the vegetables slightly crunchy.
Add the prepared thecha (paste) along with paneer, salt, and a pinch of sugar. Mix everything well so the paneer gets coated with the masala.
Add the cooked rice and gently mix everything together so the rice is evenly coated. I have not used basmati rice here, I have used Sona Masuri. You can use any short- to medium-grain rice like Sona Masuri, Ambemohar, or Kolam.
Taste and adjust salt if required.
Finish by adding crushed peanuts, lemon juice, and fresh coriander. Mix lightly.
Zanzanit Thecha Paneer Rice is ready, you can serve curd alongside it or also some chilled Chaas (buttermilk).
