Kate's off to Israel, to unearth the mystery ingredient that goes into icing sugar to make it so light, fluffy and powdery. Her journey takes her via a dip in the Dead Sea, to an enormous phosphate mine in the desert, where all is revealed.
Jimmy's in Iceland looking into skyr, a mysterious yoghurt-like product that claims to be entirely fat free, yet has a surprisingly creamy texture. So what exactly is it? Jimmy's search for the answer sees him grappling on the beach with a team of Icelandic wrestlers, who tell him they swear by the stuff, before a trip to the factory reveals that this yoghurt may in fact not even be a yoghurt at all.
Meanwhile Matt's in Cornwall, diving for the edible seaweed that has started cropping up on our supermarket shelves. Can we eat any old seaweed? And how will seaweed spaghetti match up in a blind taste test against good old-fashioned pasta?
