Cottage Pie Recipe:
2 lb (1 kg) short ribs (bone in is great as well)
2 tbsp neutral oil
1 large onion, diced
2 1/2 cups (300 g) carrots, large dice
2-3 tbsp tomato paste
1 cup (240ml) dry red wine
4 cups (950ml) Beef Bone Broth or Beef Stock
8 sprigs fresh thyme
3 sprigs fresh rosemary
2 bay leaves
1-2 tsp Marmite
2-3 tsp Worcestershire sauce
1 1/2 tbsp cooked roux
3/4 cup (110 g) frozen green peas
Rosemary salt and black pepper, to taste
Whipped potato Recipe:
3 lbs (1.5 kg) russet potatoes with 1/2 tbsp kosher salt in boiling water
1 cup (240ml) whole milk
3/4 cup (180ml) heavy cream
7 oz (200g) unsalted butter
3 egg yolks
Salt to taste
Roux Recipe:
5 oz (141 g) unsalted butter
4 oz (113 g) all-purpose flour
