INGREDIENTS:
1/2 tsp avocado oil
2 cups frozen blueberries
2 cups frozen sweet cherries
1 1/2 tbsp potato starch
1/2 cup cane sugar
3/4 cups (85g) rolled oats
3/4 cups (115g) AP flour
1/2 cup (110g) brown sugar
pinch of salt
1/2 cup (100g) cold cubed plantbased butter
plantbased ice cream to serve
DIRECTIONS:
1. Preheat the oven to 350F. Grease the inside of a 10 x 6.5 baking dish with some avocado oil. Add the frozen blueberries and frozen sweet cherries to a mixing bowl along with the potato starch and cane sugar. Mix to combine. Pour the berries into the baking dish and spread it out
2. Into a new mixing bowl, add in the rolled oats, AP flour, brown sugar, and a pinch of salt. Mix to combine. Add in the cold cubbed plantbased butter. Use your hands to press and mix together until a crumble forms. Spread the crumble onto the berries and bake in the oven for 50mins to 1hr or until the crumble is golden brown
