In this video, I’m joined by my little helper, Cooper, to solve a very serious problem—Granny’s cookie jar is empty! We’re making some super simple, soft pumpkin cookies using just a few pantry staples: home-canned pumpkin and homemade yellow cake mix, plus a few spices to bring out those cozy fall flavors. Cooper and I go through each step, from draining the pumpkin (he’s a great helper!) to mashing, mixing, and rolling the dough into cookie balls. Once baked, I add a homemade cinnamon maple glaze that gives these cookies an extra touch of sweetness, almost like a brown sugar pop-tart!
