This rye whiskey and vermouth cocktail consists of only four ingredients, is incredibly simple to prepare and is quite delicious. Byrrh, a bitter quinine based aperatif substitues for Angostura bitters and Spanish Acha Rojo is used for the sweet red vermouth component in this drink. Jonathan prefers to use Templeton Rye whiskey for his Safe Passage, but any quality American rye whiskey will do here. I do not recommend substituting Canadian Rye whiskey since the percentage of rye use can vary wildly between producers (some are 100% corn based). You may also be tempted to use bourbon instead of rye...don't. Rye whiskey is spicier, less sweet and is more assertive in flavor than bourbon. It's dryness is the perfect companion with pairing with sweet vermouth and a bitter aperitif. Enjoy!
