The best French Toast we’d never heard of is...Spanish! Torrijas aren’t necessarily breakfast competition; instead of milk, they’re soaked in orange juice and sherry, which gives them the flavor of an adult dessert. The lack of dairy (no butter in the pan) allows for clear, clean, bright flavors of zest and spices to shine through. (Chris Kimball did eat this before lunchtime. A special treat on shoot days.)
