This is my son’s favorite Thai food! It was fun making it in Thailand during our last trip, and waiting for the opportune moment to cook them was exciting.

I can get Thai bananas here, but the ones from my store, due to the cold they’re exposed to during shipping, don't ripen properly and so they’re not a great option. Using sweet plantains is more reliable.

You can also use sliced sweet potatoes, which is also commonly sold alongside fried bananas in Thailand.

Do not use regular Western bananas for this recipe as these need to fry for 5 minutes to become fully crispy and reg bananas would turn mushy in that time.
