This Summer Forum program features Professor Shannon Jones and Jackie Rodabaugh speaking on the topic of "Delivering Nutrition Security to People Experiencing Homelessness: Collaborating with Local Homelessness Experts". Addressing the challenges of food insecurity and related health issues among the homeless, such as reliance on donated food and lack of nutritious options, they discuss their collaboration on innovative research and programs to implement solutions to these challenges, including job training and community gardens where people are able to grow their own produce to feed themselves and their communities.
Prof. Shannon Jones is the Executive Director of the University of Utah Center for Community Nutrition and an Assistant Clinical Professor in the Department of Nutrition & Integrative Physiology. The Center for Community Nutrition creates innovative ways to overcome the barriers to healthful eating, working with local community members experiencing homelessness, homeless service providers, public schools, and other local organizations, such as Wasatch Community Gardens. Prof. Jones has received various awards and recognitions, including the University of Utah's Distinguished Faculty Service Award in 2023.
Jackie Rodabaugh is the Job Training Program Director at Wasatch Community Gardens, a nonprofit which empowers people to grow and eat healthy, organic, local food, through community gardens, education, and farm-based training. She previously spent six years working at the International Rescue Committee's Spice Kitchen Incubator program. She loves learning how food connects us to one another and how it can create a more inclusive, healthy, and happy community.
