Steelhead Trout with Homemade Fish Relish Recipe

INGREDIENTS:
4 Steelhead Trout fillets seasoned with salt and pepper
5 cloves minced garlic
juice of 2 lemons
3-4 Tbsp. cold butter
salt and pepper to taste
olive oil

Fish Relish:
3 medium finely diced tomatoes - drained of excess liquid
1/2 cup finely diced roasted red bell peppers - drained
2 diced greens of garden onions
1 Tbsp. chopped chives
1/4 cup fresh chopped parsley
salt and pepper to taste
1/4 tsp. Old Bay seasoning
Garlic powder
Cayenne powder
1 1/2 tsp. red wine vinegar
2 tsp. fresh lemon juice
1 Tbsp. olive oil
*Mix above ingredients and refrigerate for 1 hour before use.

In a pan on med high heat add oil and fish fillets.
Cook untouched for 2 minutes and then flip and cook an additional 2-3 minutes.
Remove from pan and set to the side.

In same pan on med heat, with 2 Tbsp. of leftover oil, add minced garlic.
Stir and cook for about 30 seconds and then add fresh lemon juice.
Cook and reduce slightly for 1 minute.
Add pinch of salt.
Turn off heat.
Add cold butter and stir until incorporated.

Add fish back into pan and coat thoroughly.
Serve fish drizzled with lemon garlic butter sauce and fish relish.
Enjoy.
