Stack Cooker Dinner - Rice, Chicken Adobo, Mixed Vegetables

I used the stack cooker to make all of the dishes at one time using the microwave. The chicken was a large amount so it needed additional cooking time. The finished product was delicious!

Chicken Adobo
6 large chicken thighs, bone and skin on. You can use bonless skinless
3 garlic cloves, roughly chopped
1 small onion, sliced
3 bay leaves
1/3 cup soy sauce
1/3 cup white vinegar
1 to 2 Tablespoons brown sugar
1/2 cup water

In the 3 quart casserole (bottom bowl) put 2 cups of white rice. Wash rice and add 2.5 cups of water.

Stack the 1-3/4 quart casserole on top and add the Chicken adobo ingredients inside.

Invert the cover and place on the chicken. Put 12 oz of frozen mixed vegetables and add approximately 4 Tablespoons of water.

Place the stack cooker in the microwave and cook for 25 minutes. Remove the rice and vegetables. Cook the chicken for 15 more minutes, if needed. Cover with a plate cover or wax paper to prevent splatter.

If you just want to cook the chicken or rice by itself without the other layers, cook for 15-20 minutes.

**Cook times will vary based on microwave wattage. I use a 1,100 watt microwave.**
