Mom's Chicken Papaya
Mom was over and made my favorite comfort food!
1.5 to 2 lbs chicken wings an/or thighs. Cut thighs in half
1 onion, sliced
1 tomato sliced
5 garlic cloves, sliced/diced
2 teaspoons olive oil
1 XL cube beef bouillion
1 to 2 Tablespoons Soy Sauce
1 teaspoon Trader Joe's seasoning salt (optional)
1 medium GREEN papaya. Peel, seed, skin, and cut into small chunks
3/4" fresh Ginger, sliced
2 drops of Lemongrass Oil (we didn't have fresh lemon grass)
1 lb of Mallunggay leaves (moringa) Use as much or as little as you want
S&P To taste
Water
In a 4 quart pan, heat oil and brown onions, garlic, and ginger. Add tomato and cook down. Add bouillion cube and melt down into everything.
Add Chicken and brown on all sides. Add water to cover chicken and bring to a boil. Add seasonings and soy sauce. Continue to boil until meat is tender. Add papaya and cook until softened. Check seasonings adjust to taste. Once papaya reaches desired tenderness, cover with mallunggay leaves and cover. Remove from heat.
