To round out our look at all things Aussie Whisk(e)y, Fred is making his twist on the classic Smash with what he has dubbed the Southern Hemisphere Smash - an apricot delight!

To make it you will need:

60mls (2oz) Starward Nova
20mls (2/3oz) Lemon Juice
1 heaped barspoon of apricot jam (jelly)
2 dashes of Angostura bitters
Dried Apricot & Sage leaves for garnish
