Homemade syrup (like simple syrup made from sugar and water) can generally last:

Up to 1 week at room temperature if it's a basic 1:1 sugar-to-water ratio and hasn't been sterilized.
Up to 1 month or more if it's a 2:1 sugar-to-water ratio (also called "rich syrup") because the higher sugar content helps preserve it better.
To extend shelf life without refrigeration:

Use sterilized containers.
Sobolo syrup (hibiscus concentrate) contains ingredients like hibiscus petals, ginger, pineapple peels, cloves, lemon or other fresh fruits β€” all of which make it more perishable than plain sugar syrup.

Without refrigeration, sobolo syrup typically lasts:
1 to 3 days at room temperature in a cool, dark place (especially if no preservatives are added).

With refrigeration, it can last:
7 to 10 days, possibly up to 2 weeks if stored in a sterilized, airtight container.

To extend shelf life without refrigeration, you can:
Add natural preservatives like:
Lemon juice or citric acid (helps lower pH and slow spoilage).
A small amount of food-grade sodium benzoate or potassium sorbate (if you're okay using these).

Boil thoroughly and bottle hot in sterilized glass bottles to reduce bacterial growth.
Avoid adding fresh fruit after boiling β€” always strain and bottle while still hot.
If you’re making sobolo syrup for commercial use or to sell, refrigeration or mild pasteurization is strongly recommended.
