If you’re looking for a simple way to make juicy chicken fajitas on the grill, this is it.
No marinade, no complicated prep—just well-seasoned chicken, hot coals, and a quick cook that brings everything together. I’m using chicken thighs here for flavor and tenderness, along with peppers and onions cooked right on the grill for that classic fajita finish.
This is an easy, repeatable method you can throw together any day of the week.
Cooked on a Weber kettle using a simple two-zone setup.
Ingredients:
Chicken thighs
Bell peppers
Onion
Oil
Your favorite seasoning
Notes:
Cook over direct heat to get a good sear, then move indirect to finish
Slice everything up and serve however you like (tortillas, bowls, etc.)
