Tender, slow cooked meat marinated in a rich, chili-based adobo sauce turned into a savory puff pastry with Oaxaca cheese, onion, and chopped cilantro.
Ingredients:
• 10oz Shredded Birria
• 1 ½ Cup Shredded Oaxaca Cheese
• ½ Bunch Chopped Cilantro
• 1/3 Cup Minced Red Onion
• 12ea 4x5in Pieces of Puff Pastry
• 8oz Consommé from the cook of the Birria
• 1egg + 2 Tbsp Water, Whisked together to make an egg wash
Directions:
1. In a mixing bowl mix the meat, cheese, cilantro, and onion.
2. Evenly divide the mixture onto 12 pieces of puff pastry.
3. Roll each pastry into about the size of a quarter then then tuck and pinch the side in to make a sealed pocket.
4. Place the puffs on the cookie sheets even spaced about 1 ½ inches apart.
5. Brush the egg wash evenly over each pastry.
6. Preheat your Pit Boss Grill or Vertical to 420 degrees.
7. Place the tray(s) on the upper racks of the grill and bake for 10 to 12 mins rotating often to ensure and even bake.
8. Remove the pastries and allow them to cool for 10 mins before serving with the consommé.
