If you want to make the best grilled fish tacos at home, I can help you make that happen. First, start with great fish. I'm using Barramundi but Mahi-Mahi, Halibut, Swordfish or another premium solid, meaty fish would work great. Next add the Blackening Rub and some Olive Oil to your fish and let it marinate for about an hour. Grill it nice and hot and grill your flour tortillas as well. To that you need to add some finely shredded cabbage. Red and/or Green cabbage as you prefer. The pickled Red Onions are a must as is the Radishes. Seriously, don't forget the radishes! Queso Fresco or Cotija Cheese, your choice but don't skimp wither way. Drizzle with some Crema or Mexican Sour Cream to set it off and whatever you do, Don't forget the Romexco Salsa! Blackening Rub Recipe:
1 tbsp garlic powder
1 tbsp onion powder
2 tbsp paprika
1 tbsp chili powder
2 tsp of chipotle or cayenne chili powder
1 tsp cumin
1 tsp ground oregano
1 tsp salt
1 tsp ground black pepper
1 tbsp granulated or brown sugar
