✿ Veganlovlie Recipes / Vegan Gluten-free Pancakes : I was inspired by the egg foo young recipe I grew up with in Mauritius, to make these Chinese-style vegan vegetable pancakes. They are crisp at the edges, tender inside, and made with chickpea flour and sweet potato.

I came up with these savory vegetable pancakes to which I've added some sweet potato mash in the batter. The pancakes turned out fluffier on the inside with just the right hint of sweetness and slightly caramelised on the outside for a satisfying crispiness.
