✿ Veganlovlie Recipes / Vegan Curry - Bottle Gourd, Cauliflower, Mixed Beans : This delicious curry is made without any oil and it's so tasty you won't miss the oil for one bit. I have used bottle gourd but you can use zucchini or cauliflower as a substitute if you cannot find bottle gourd. Else, I suggest you give bottle gourd a try as it has a nice texture and while it is mostly bland it does have a very subtle peppery taste. In Mauritius, we have variations of this gourd which we call calabash (calebasse) even though calabash are different vegetables.

In this curry, I have added a selection of chickpeas and beans. You can use any beans that you like. I particularly like the combination of brown chickpeas with the bottle gourd as I find that their earthy flavour marries the hint of pepperiness from the gourd perfectly. You may substitute with red kidney beans for something close.
