Friendship is Magic and so are these Sapphire Cupcakes from My Little Pony!
INGREDIENTS:
Candy sapphires:
1 cup of sugar
1/3 cup of light corn syrup
1/3 cup of water
Blue hard candy coloring
Raspberry/blueberry Flavoring
Silicone mold
Blue shimmer/lustre dust
Blueberry buttercream frosting:
1 cup unsalted butter (chilled and cubed)
3 cups confectioner’s sugar
3 tbsp heavy whipping cream
½ tsp blueberry emulsion flavoring
White cupcake box mix, typically needs:
Eggs
Vegetable oil
Cupcake liners (white or tan colored)
INSTRUCTIONS:
1. In a large deep sauce pan combine water, sugar, corn syrup, and food coloring. Mix over medium high heat until sugar starts to dissolve. Attach a candy thermometer to the side of the pan making sure it does not touch the bottom of pan for an accurate temperature.
2. Continue to boil until sugar mixture reaches 300 degrees (hard crack stage) about 20 minutes. Watch closely, if mixture starts to boil to close to the edge of pan remove from heat, and stir until bubbles subside. Then return to medium high heat. It's better to slightly be over 300°F than under for candy to set properly.
3. Once mixture reaches 300 degrees remove from heat and stir in the flavoring, working quickly.
4. Pour immediately into molds. Allow to cool for 1 hour.
5. Bake cupcakes according to the package.
6. Begin making the frosting.
7. OPTIONAL: place about 1 1/2 cups worth of the blueberries in a small food processor or blender and puree until smooth, stop to scrape the sides as needed. This should only take a minute or two.
7. Beat butter in the bowl of a stand mixer until creamy.
8. Turn mixer to low and add confectioner’s sugar until combined.
9. Add heavy cream, blueberry emulsion and a couple drops of blue food coloring to desired shade. Beat until frosting is smooth and blue.
10. If adding optional pureed blueberries, continue adding confectioner's sugar and mixing until the frosting is thick and holds its shape.
11. Fill a piping bag, cut off the tip and frost cupcakes in a circular motion working inwards. Take your candy gems and place all around the cupcake top to finish the look.
