We hope everyone had a Happy Thanksgiving Feasters! Today we've got something to be thankful for, a Food Wars recipe! We couldn't wait to "wrap" our hands around this one and we're sure neither can you!

INGREDIENTS
Marinade:
2 Tbsp. soy sauce
2 Tbsp. Honey
1 Tbsp. sake
1/2 tsp salt
1/4 tsp pepper
1/4 tsp cayenne pepper
1/4 of an apple
1/4 of an onion
2 Tbsp. Fresh ginger, finely grated
3 garlic cloves, minced
1 lb. Chicken thigh meat
1/2 cup of potato starch
Frying Oil
Bánh Xèo wrap
3/4 cup flour (low protein such as cake/pastry flour)
3/4 cup Rice Flour
1 cup Water
3/4 cup coconut milk
1/2 tsp. Turmeric
4 tsp. Sesame oil
Lettuce
Perilla
Flat-Leaf Parsley or cilantro
Black Pepper
CHILI SAUCE
3 Tablespoons Hot Sauce
2 Tbsp. Chili sauce
1 Tablespoon Lemon Juice

INSTRUCTIONS
1. Cut chicken thighs into small cubes.
2. Cut onion and apple small chunks, put into a food processor with the other marinade ingredients, and puree. Put the marinade into a plastic bag and add the chicken. Place into the refrigerator and let marinate overnight.
3. Heat frying oil to 350°F. Place chicken and marinade into a bowl and add the potato starch. Lightly toss until somewhat combined, but do not mix until each chicken piece is evenly coated because the uneven pockets of potato starch will give the chicken its signature unique texture.
4. Deep-fry for 5 minutes, or until golden brown. While frying, use a skimmer to scoop the meat out of the oil briefly one or two times to air (this give it the effect of being "twice-fried")
5. Make the Banh Xeo batter by putting the flour, rice flour, and turmeric into the bowl of a stand mixer and mix to combine. Slowly add coconut milk, water and beat into a batter.
6. Heat cooking oil in a frying pan then add 1/4 of the batter. Quickly spread it thinly across the pan and cook on low heat. Once the edges start turning up add one teaspoon of sesame oil all the way around the edges and cook until crispy. Quickly flip with a spatula, briefly cook the other side, and then move to a plate. Repeat with the remaining three portions of the batter.
7. Place the parsely, perilla leaves and lettuce leaves onto the wrap and add the fried chicken. Quickly mix together the chili sauce and pour over the chicken, and top with black pepper.
