Rosemary and Blood Orange Holiday Wreath Cookies (using our Direwolf Cookie recipe from the Feast of Fiction Cookbook)

INGREDIENTS:
2 ¼ cups whole wheat flour
1 teaspoon salt
2 teaspoons finely chopped fresh rosemary, plus extra sprigs for garnish
½ cup granulated sugar
3 tbsp blood orange juice
Zest of 2 blood oranges, plus 1 tsp for icing + garnish
Zest of 1 lemon
1 cup unsalted butter
1 teaspoon vanilla extract

Vanilla icing:
2 cups powdered sugar
1 tsp milk
½ tsp vanilla extract
Zest of 1 blood orange

Sugared rosemary:
Fresh rosemary sprigs
Granulated sugar

Dried cranberries

INSTRUCTIONS:
Prepare two baking sheets with a piece of parchment paper.

In a medium bowl, whisk flour, salt and rosemary together. In the bowl of a stand mixer, combine sugar, blood orange juice and both citrus zests by whisk until combined.

Add butter and beat until well combined. Add vanilla extract. Slowly add dry ingredients and mix until combined. Drop dough onto a floured surface. You may need to turn the dough a couple of times by hand in case it isn’t fully incorporated by mixer.

Roll out dough to about ½ an inch thick. Put dough into the fridge for 30-60 minutes to set for best results.

Once set, press the cookie cutters into the dough but using a scalloped cutter and a round 1 inch cutter to cut out the hole in the middle. Repeat the process of rolling out dough, putting in fridge to set for an additional few minutes, and cutting out wreaths until all the dough has turned into your unbaked cookies.

Bake for 12-15 minutes at 350F until edges are golden brown. Make icing and garnishes while cookies are baking.

To create the rosemary, dip sprigs in water and place on prepared baking sheet. Sprinkle granulated sugar and make sure the sprigs are completely coated. Let sugar dry completely, for at least an hour. (Best to be made the day before.)

To create vanilla icing, mix powdered sugar, milk, vanilla extract and an entire bowl of blood orange zest into a bowl. If icing is too thick, add additional milk by the teaspoon. Icing should be the consistency of simple syrup - not super runny but also not thick like honey. Cover with saran wrap until ready to use.

Once the cookies have baked and cooled, dip the top of the cookie straight into the bowl of icing. Let the excess icing drizzle off, and let set on a parchment lined wire rack to set.
Add rosemary and orange swirls to top off the festive look.
