I’m pretty sure you already know about this, but this is something called “Nagashi-Somen” in Japan. Somen is a Japanese thin wheat noodle that has existed for about 1,000 years.
But the culture of running them in a bamboo spilt in half with water started in 1955. There were some people in Miyazaki prefecture who wanted a way to enjoy their meal cooler during summer, and the Nagashi-Somen was invented. Don’t ask me how they got to the idea, I have no clue. But it got very famous and now we do it everywhere in Japan.
This particular somen restaurant you introduced is called “Hirobun,” and it is located in northern Kyoto where I live, and it’s super popular among locals too.

I’m sure they keep their equipment clean. I mean there’s nothing good left about Japan if everything wasn’t clean.
