Ingredients:
Poha
POHA | पोहा 1.5 CUPS
Soaking the Poha
SALT | नमक A PINCH
SUGAR | शक्कर 1/2 TSP
LEMON JUICE | नींबू का रस OF 1/2 LEMON
TURMERIC POWDER | हल्दी पाउडर 1/4 TSP
Eggs
EGGS | अंडे 3 NOS.
SALT | नमक A PINCH
BLACK PEPPER | काली मिर्च A PINCH (FRESHLY CRUSHED)
Cooking
GHEE | घी 1 TBSP
MUSTARD SEEDS | राई 1/4 TSP
CUMIN SEEDS | जीरा 1/4 TSP
ONION | प्याज़ 1 MEDIUM SIZED (FINELY CHOPPED)
CURRY LEAVES | कड़ी पत्ता 8–10 NOS.
GREEN CHILLI | हरी मिर्च 2 NOS. (SLICED)
TOMATO | टमाटर 1 MEDIUM SIZED (FINELY CHOPPED)
SALT | नमक A PINCH
TURMERIC POWDER | हल्दी पाउडर 1/4 TSP
GARAM MASALA | गरम मसाला 1/4 TSP
EGGS | अंडे AS PREPARED
POHA | पोहा AS PREPARED
WATER | पानी A SPLASH
Finish
ROASTED PEANUTS | भुनी मूंगफली A HANDFUL (CRUSHED)
FRESH CORIANDER | हरा धनिया A HANDFUL (CHOPPED)
Method:
Start by soaking the poha. Place a colander over a bowl and add the poha into it. Pour enough water so the poha is submerged, then quickly and gently wash it with your hands so all the loose starch comes off, you will see the water turn cloudy. Once washed, drain the water out and let the colander sit over the bowl so only as much water as the poha needs stays, and the rest drips away below.
Then, finely chop the onion in a chopper and transfer it to a bowl. Roughly cut the tomato, add it to the same chopper, and chop it as well.
Check the poha at this stage, each grain should be separate, soft, and well soaked with none of them sticking together. Add salt, sugar, lemon juice, and turmeric powder to the soaked poha and mix gently.
In a bowl, crack in the eggs and add salt and freshly crushed black pepper. Beat well.
Now heat a kadhai on high flame and add ghee. Once the ghee is hot, add mustard seeds and cumin seeds and let them crackle. Add the chopped onions and cook, stirring well, until they turn light golden brown. That slight caramelised sweetness from the onions makes all the difference.
Once the onions are light golden brown, add curry leaves and sliced green chillies. Stir well, then add the chopped tomatoes along with a pinch of salt. Cook for about a minute. Add turmeric powder and garam masala and mix everything together.
Now pour in the beaten eggs and stir continuously. Cook for just 1–2 minutes — keep the eggs soft and do not overcook them.
Add the seasoned poha and mix everything together gently. The eggs will continue to cook along with the poha. Add a splash of water, cover, and switch off the flame. This keeps the poha from drying out and makes it fluffy and moist. Let it rest for 2–3 minutes.
Open the lid, give it a stir, you will see the steam rising from within. Finish with crushed roasted peanuts and fresh coriander and mix well.
