A rich, bubbling skillet of melted cheese and spicy chorizo.

Ingredients

8 oz Mexican chorizo (or spicy sausage, casings removed)
1 cup shredded Oaxaca or mozzarella cheese
½ cup shredded Monterey Jack or cheddar cheese
1 small onion, finely diced
1 clove garlic, minced
1 Tbsp butter or tallow (for cooking)
1 Tbsp tequila or mezcal (optional, for flambéing)
Fresh cilantro, chopped (for garnish)

Preparation

Preheat the oven to 400°F (200°C).

Heat butter or tallow in an oven-safe skillet over medium heat. Add chorizo and cook 5–6 minutes until browned and slightly crisp.

Add diced onion and cook for another 2–3 minutes until softened. Stir in minced garlic and cook for 30 seconds.

Mix together the cheeses in a bowl, then spread evenly over the hot chorizo mixture in the skillet.

Transfer to the oven and bake for 8–10 minutes, until the cheese is fully melted and bubbling.

(Optional) For a dramatic finish, carefully drizzle tequila or mezcal over the top and ignite briefly with a long lighter, allowing the flame to burn off.

Garnish with chopped cilantro and serve immediately with, lettuce wraps, or vegetable sticks.
